Ubbu Rotti And Alasande Bendhi



This is a traditional recipe which we have been relishing since we were born. Really a finger licking recipe i say.This dish should be enjoyed with a spicy curry made out of long beans or chineese spinach itself. Just an irresistable taste and satisfying one to the soul.Hmm......just the simple discription of this rotti makes my saliva to dribble down.I just had 3-4 rotti just now in the afternoon and still feel like having some more although there is not space left in my belly.Well lemme just come down to the ingredients and method with some mouthwatering pictures of this delightful dish.


UBBU ROTTI:
========

Ingredients:-
---------
White rice - 1 cup
Boiled rice - 2 cups
Jeera - 1 tbsp
Salt - as per taste

Method:-

1.Soak the raw rice in hot water overnight.

2.Now grind this adding no water or very little water into a smooth batter.As i had no grinder i used normal 12 speed blender.Hence i had to add a little bit of water.


3.Hint:- if your dough becomes water then no problem just empty it into a pan and keep it in a stove and keep stirring untill the mixture becomes some what hard so that small ball can be rolled out from it.

Now roll out small lemon sized balls and press in into small poori sized roti by keeping between two greased plastic sheets and pressing with a flat plate.
5.Bake them over a hot pan until they are semi cooked , then put them over direct heat if you have burners in your stove or else do as you do to cook a phulka.

6.Now collect the rottis in a dish placed with a thick tissue or a cloth.
7.Good to relish when its very hot with the long beans bendhi


Bendhi:
======


Ingredients:
---------
Long beans - 1 bundle
Black eye beans- 1 cup[ cooked],optional
Coriander seeds - 1 tbsp
Urad dal - 1 tsp
Cumin - 1tsp
Shot red chillies - 6-7[as per your taste]
Turmeric powder - a pinch
Chilly powder - ''
Coconut grates - 1/2 cup
Tamarind paste - 1/4 tsp
Jaggery - 1 tsp



Method:-

1.Chop up the long beans into 1.5 inch big pieces ,add little water , a pinch of salt,chilly powder and turmeric powder and cook them till they turn tender.
2.Take 1-2 drops of oil in a small pan and roast the chillies,then add coriander,urad dhal,cumin to it a dry roast them for 1 min.
3.Add them to a blender with 1/2 cup of coconut grates and tamarind and blend them into paste form adding little water.
4.Now add this paste to the cooked long beans and add already cooked black eye beans and season with enough salt and jaggery and bring to a boil.
5.Now take about 1/2 tsp of oil in a small pan add mustard seeds and just when it stats to splutter add curry leaves and pour it to the curry .Again bring the curry to a boil after thorough stirring.

Enjoy hot hot ubbu rotti with this bendhi on this cold winter.

Methi parata



This is my favorite parata.I just love methi in any form.It is easy to prepare and quite filling too.The mear appearance is itself so good.The methi gives out a different type of fragrance hmmm..i just love emme

Ingredients:
---------
Wheat flour -2 cups
Methi leaves- 1 small bunch
cumin -1 tsp
chilly powder- 1 tsp
turmeric powder- 1/2 tsp
Salt -1.5 tsp
Oil - 1 tsp

Method:

1.Clean the leaves and chop up the methi leaves very finely and add chilly powder,turmeric ,salt and cook in microwave for 2 mins.
2.Then add this to a large bowl with tsp of oil and salt and then add the wheat flour and hot water and mix up all together forming a soft dough .Then keep it aside for 30 mins.
3.Then roll out small balls out of it ,roll out into thin chapathi's.
4.Bake in a hot thava applying little oil or ghee on both sides till they get roasted well.
5.Serve hot with spicy pickles and thick yogurt at the side and enjoy.

Aloo parata


My Husband is a great fan of potato.He likes anything prepared out of potato.He even eats boiled potato as it is with a pinch of salt, well think now you have got a picture how much he likes potatoes.I keep preparing differnt types of recipes out of paotoes.Aloo parata is one of his favorite .He enjoys each bit of the parata and i love to see him eat his meal in that way.The relish, the contentment what i see in his face makes me feel top of the world.So i wanna share this recipe with you friends freshening up that moment again,the happy face of my hubby just by looking at those hot spicy parata's.Hmm...

Ingredients:
----------
Poataoes -2 large cooked
Onion - 1 cup
ginger - 2 tsp
garlic - 2 large pearls
grren chilly -1
coriander leaves -3 tsp
corainder powder-1/2 tsp
cumin -1 tsp
garam masala -1/2 tap
chilly powder -1/2 tsp
salt -1 tsp
Wheat flour - 2 cups
ghee - 1 tsp

Method:

1.Take 1 tsp salt and a pinch of sugar ,1 tsp of ghee in a vessel add flour and mix using hot water and prepare a dough ,keep aside covered with a damp cloth.
2.For the stuffing mash the cooked potatoes properly.Add finely chopped onions,garlic,fine ginger grates,green chilliy,coriander leaf and powder,cumin,garam masala,chilly powder to it and mix properly to form a nice paste like and keep aside.
3.Make small balls out of the chapathi dough and roll out small puri size roti's out of it and stuff a big spoon ful of the stuffing , seal the edges and roll over the flour and flatten .Then roll out thin paratas.
4.Then bake it in the tava till both the side turn brown and crisp.
5.Smear both the sides with ghee and bake properly.
6.Serve hot with sabji at the side and some onions and curds or even pickle.Enjoy.

Fluffy Poori



This is a good recipe which even the kids will love to have at any time.It can be eaten just as it is or with any side dishes.Most of them love it with ksheera in southIndia and some like it with spicy chole in northen part of India.

Ingredients:

Wheat flour -2 cups
Maida - 1cup
Salt -1.5 tsp
Curds - 1 cup
Cumin - 1 tsp
Turmeric powder-1/2 tsp
Oil - for deep fry



Method:

1.Take a large bowl ,add salt and 1 tsp of oil ,add all the flours and curds to it .
2.Add cumin and mix all the ingredients with enough water.
3.Adding curds to poories makes it soft and prevents it from absorbing oil.This way even the poories remain fluffy.
4.Even the oil does'nt get black.
5.Now roll out small ball out of the dough and then roll out small chapathi out of it.The only thing to be kept in mind is the poories should not be rolled too thin like chapathi's as it does not bloat up thoroughly when you fry them.
6.Now take oil in a pan and heat it properly and then fry up these poories.
7.Serve hot with bhaji or chole.
8.Actually anything in sides is ok for poories.Enjoy it the way you like.

Carrot parata





Here is a simple ,healthy recipe for all veggie lovers.This has a natural colour due to the carrot and in this way you can hide vegetable and give your kids a healthy meal.

Ingredients:

Carrot -2 chopped finely
Chilly powder -1 tsp
Cumin powder - 1/4 tsp
Coriander powder-1/4 tsp
Oil - 1tsp
Salt - 1 tsp
Wheat flour - 2 cups
Hot water -1/2 cup


Method:
________
1.Chop the carrots finely ,then cook it in microwave for 3 mins with salt and 3 tsp of water.
2.In a large bowl take wheat flour,oil,all the masala powderand mix properly.
3.Then add the cooked carrot to it and hot water and kneed properly until it forms a soft dough for about 10 mins.
4.Then make small balls out of it and roll into thin parata's.
5.Then bake it in aan until both sides become a bit brown.
6.This is ready to be served.These become very soft and looks great.

Sarson ka parata




Here is the recipe which is quick and tasty.It can be had plain with curds or as it is.We can also prepare it with the remaining sarson ka saag.Looks great and tastes wonderful.

Ingredients:

green mustard- 1 cup boiled puree
Spinach - 1/2 cup Boiled puree
Ginger - 1 tsp
onion grated - 2 tsp
Carrot grates - 1 cup
Chilly powder - 1 tsp
Cumin powder - 1 tsp
Green chilly paste- 1tsp
salt -1 tsp
Oil - 1tsp
Milk -3 tsp
Wheat flour - 2 cups


Method:

1.Take all the puree and pastes mix well to this add milk,ghee and salt and give a good toss
2.Now add all the dry ingredients and mix properly and kneed for 10 minutes properly.
3.Then roll it into small balls and make small chapathi out of it.
4.Fill it with carrot and roll it into thin paratas.Bake till it turns slightly brown .
5.wrap it in a cotton cloth ank keep aside for extra softness.

Makki Ke roti


Ingredients:

2 cups - Makki ki aata ( Maize powder)
1 cup - all purpose flour
1.5tsp - salt
1tsp - chilly powder
1 tsp -freshly chopped cold coriander leaves
1 tsp -ginger grated
1 tsp - greenchillies finely chopped
2 tsp - onions finely chopped


Method:
________
1.Mix all the ingredients in a large bowl and prepare a dough by adding very little water.
2.Now when the dough forms a piled up mass roll on small balls out of it.
Take a alluminium foil or banana leaves and smear it with oil and place the ball of the dough in it and press and make thin rotis out of it .You can also press using hand or the roller.
3.Now take a iron pan or any non stick pan and bake the rotis till golden brown and crisp on both the sides.
4.Serve hot with sarson ka saag and onions on sides.

Kulcha


Here is a recipe of Kulcha which can be eaten with any of the north indian dishes.Easy healthy and looks nice too.

Ingredients:
____________
All purpose flour -3 cups
Salt -1tsp
Sugar - 1 tsp
Olive oil - 2 tsp
Yeast -3/4 tsp dissolved in warm water and kept for 5 min
Curds -1/2 cup( exceptional)
Hot water - for mixing the dough about 2 cups
Thil -3 tsp
Carrot grates - 4 tsp
chorianderleaves-4 tsp

Method:

1.Mix the salt,sugar and olive oil in a large bowl.
2.Now add flour ,curds and hot water and then the yeast to it and kneed into a dough.
3. Cover the dough by a damp cloth and keep in a warm place (Oven) for about 2 hrs.
4.Then remove it out and roll into small balls and roll into flat kulchas.
Now brush some water over the upper surface of the kulchas and sprinkle with black or white thil ,some choriander leaves and grated carrot and sprinkle little flour over it and roll again 1-2 times so that it sticks firmly.
5.Now preheat the pan and apply little butter /olive oil and place the kulcha with thil surface upwards.
6.Then grease the upper surface and bake it upside down.
7.Serve it hot.
8.This can also be prepared instantly with the store bought pizza dough.But heat it in the microwave for 30 seconds and kneed for an additional 5 mins and then prepare in the same manner.

Mooli parata


Ingredients:
____________
Mooli - 1 big grated
Green chillies - 2 chopped finely and minced
Salt -1 tsp
Coriander powder - 1/2 tsp
Cumin powder - 1/2 tsp
chilly powder - 1/2 tsp
Turmeric powder -1/2 tsp
Mix all the above amd keep aside for stuffing

Now prepare the parata dough by using-
wheat flour -2 cups
salt -1/2 tsp
oil/ ghee - 1.5 tsp
water

Method:
_______
1.Prepare the dough using the above ingredients and kneed for 5 min properly.
2.Now roll it into small balls and prepare small roti out of these balls.
3. Stuff each with 1.5 tsp or 2 tsp of the stuffing which we have already prepared by mixing all ingredients.
4.Now cover it by the edges and roll it in wheat flour and make thin roti and bake in pan with little greasing using oil or butter.
5.The parata's bake easily and look awesome and are ready to eat.
