Lentil rice

This a wonderful recipe which i tried out from a book with a little bit of my own twist to it.Lovely healthy recipe which is quite easy to prepare and will be ready in no time.It contains a very few ingredients .Believe me friend i just love the way it tasted so creamy,rich and lovely....Just cant wiat to prepare it again.





Ingredients:-
-----------
Basmati Rice- 2 cup
Split lentil - 1/2 cup
Bay leaves -1 large
Red onion - 1 large
Green chilly - 1 large
Chilly powder- 1/2 tsp
Garam masala - 1 tsp
Ghee - 2 tsp
Oil - 1 tsp
Coriander leaves-2 tsp
Orange zest - 1 tsp





Method:-
--------
1.Cook the rice and allow it to cool for 1/2 hr
2.Take the lentil ,rinse it and cook it with bay leaf until just tender,then drain and set aside after removing the bay leaf.
3.Now chop up the onion and green chilly very fine and keep aside.
4.Take a large pan add oil and then saute in onion and chilly till the onion turns transparent.
5.Then to this add 2 tsp of ghee/butter the spice it up with salt,pepper,chilly powder and garam masala .
6.Now add the rice mix properly to combine all the flavours,then add lentil and mix slowly.
7.Now remove the pan from the fire add orange zest and finely chopped fresh green cilantro leaves.Serve hot.....Enjoy

Spinach Enchiladas

Today I am here with a nice Mexican food recipe .Once in a while its good to leave off your strick diet rule and enjoy the creamy spinach with the chewy cheese combo rolled in corn tortillas..hmm the yummy tomato base sauce with the cheesy spinach rolled enchilada make the best combo ever.....This is the best meal anyone can ever have.I made a big trayof this enchiladas which got almost empty in no time. I must confess that it came out so good and yummy which forced me to post this recipe immediately. Its the best recipe to share with you all.So here i am....



Ingredients:

Corn tortilla - 6 large
Spinach - 1 bunch /a frozen pack
Green onions - 1/4 cup
Garlic cloves - 3-4
Oil - 1 tsp
Cheese -1cup+3tbsp
Sour cream - 1/2 cup

For the base sauce:-
Tomato puree - 3 tbsp
tomato basil pasta sauce- 1 cup
Barbecue Sauce - 1 tbsp
Sambalo-leek - 1 tsp
chilly powder - 1/2 tsp
salt - 1/2 tsp



Method:-

1.Take a pan , add 1tsp of oil and then add green onions followed by garlic to it and saute for 1 min in medium heat till it just releases the fragrance.
2.Chop the spinach into thin strips and cook in microwave for 4 mins.
3.Add the spinach to the onions and saute for another 5 mins.Then remove from heat.
4.Add sour cream and 3/4 cup of cheese of your choice and mix properly adding enough salt and pepper.I have added even chilly flakes as we like it spicy[Its optional]
5.Now mix all the base sauce ingredients and keep ready.
6.Now take a large pan and just heat up the corn tortilla on both side for about 15 secs without adding any oil .
7.place a big spoon full of spinach mixture in the centre flatten a bit and roll them up .Then place the floded side down in a 9x13 inch pan which has a little of base sauce already spread in it.
8.Similarly roll out remaining 5 tortillas and place them one after the other .Then pour the remaining tomato base sauce over the tortilla rolls cover totally with this sauce.
9.Pre-heat the oven to about 350deg F .Now sprinkle the remaining cheese over the top of tortillas uniformly and bake in the oven till the sauce starts to bubble and the cheese melts and turns slightly brown about 8-10 mins.
Enjoy when its still hot....

Yummy Penne Pasta



I and' N' both of us like to try new food always.I always eat out different varieties of food and come home and try to prepare them out in my own kitchen .Well i always enjoy doing this.So finally came up with pasta this weekend.Well i must confess to you guys it came out so good that yesterday we went and bought some pasta to prepare for the next week also.So think this weekend its gonna be a italian cuisine in my house ..hee.hee.

Ingredients:-
----------
Penne pasta- 1 pack [10oz]
Tomato paste-3 tsp[Preferably Roma]
Fresh basil leaves-5-6
Cheese- 3 tbsp
Salt and pepper- for seasoning
tomato sauce- 2 tsp
One large tomato- diced
Garic- 4-5 big cloves
Olive oil- 4tsp
Chilly flakes- 2tsp

Method:-

1.Take a large pot and fill it with water ,add a hand full of salt and 1 tsp of olive oil .Add penne pasta to it and cook it not till done.Stop when just done .Drain and keep aside.Save about a cup or two of pasta water and keep aside.
2.Now take a pan add olive oil and add minced garlic and saute for 1 min till it turns slightly creamish brown.Then add chilly flakes and saute for one more minute
3.Then add diced tomatoes and keep stirring for a couple of minutes.I have used roma tomatoes as they are more fleshy and less watery.
4.Then add tomato sauce and tomato paste and stir till it becomes thick.
5.Then add panne pasta to it and season with salt and pepper and mix properly.I have selected penne here because it has ridges and it will absorb all the flavour and just taste yummy.
6.If this turns dry thin it by adding pasta water what we had saved.This is a tip what i got by watching food network..Love that channel.
7.Then finally add strips of basil and stir so that it mixes uniformly.then sprinkle cheese and keep lid closed and remove from the fire..
8.Serve hot ... with fresh basil on the top.Enjoy..

Sarson ka saag


This is typical punjabi recipe which is very healthy and rich in iron content and cuts down the fat.Its a lovely looking green curry which you will love to eat.

Ingredients:
__________
2 bunches- green mustard(sarson)
1 bunch - Spinach
1.5 inch - finely chopped and minced ginger
3-4 cloves - garlic
4 -green chillies
1 tsp - cumin
1 tsp -red chilly powder
1 tsp - garam masala
1/2 tsp - turmeric
salt -as per taste
1tsp - powdered jaggery
2tsp - oil

Method:
________
1.Wash ,clean and chop both the greens.
2.Add 1 cup of water and steam cook these greens with 1 tsp salt ,turmeric ,chilly powder,ginger ,garlic,2greenchillies,garam masala.
3.This will be done within 15-20 mins.Nowadd jaggery and remove and let it cool.
4.Coarsely blend it into a paste and cook in a vessel till all the raw smell goes off .
5.Add jeera and then in a samll pan take 2 tsp of oil ,add 1 tsp of finely chopped garlic and 2 green chillies and fry them till the ginger turns brown.
6.Now add this to the saag and slightly saute them and cook for an additional 5 mins.
7.Serve with makki ki parata and onions in the sides.

Dal fry



Ingredients:
___________
1 cup - tuvar dal
1 tps - turmeric powder
1tsp - tamarind water
1 tsp - red chilly powder
1tsp - garam masala powder
1/2 tsp- cumin powder
1/2 tsp-coriander powder
1 tsp - mustard
1tsp -urad dal
2 - dry red chilles
6-7 - curry leaves
1 large - tomato[chopped]
1 large - onion[ chopped]
3-4 -garlic cloves
1tsp - oil
salt


Ingredients:

1.Pressure cook the dal with salt, turmeric and chilly powder .
2.In a pan take mustard,urad dal red chilly curry leaves and oil and wait till it splutters
3.Then add chopped onions and saute them till they turn transparent.
4.Now add tomatoes and cook till it becomes very soft.
5.now add all the cooked dal and remaining masala and bring to a boil.
6.Let it simmer and cook for an additional 10 mins.
7.Serve hot with plain rice or roti.

Palak peas Pulav


Ingredients:
____________
2cups - raw rice [cooked and cooled]
1 bunch -palak finely chopped
1.5 cup- peas [fresh]
1 big - onion [ chopped]
2 big -green chillies
1 stick - cinnamon
5-6 - cloves
2 big -bay leaves
3-4 - flowers[dry spice]
oil -4-5 tsp
3tsp - cumin
1 tsp - ghee
1tsp - pepper corns
1/2 tsp- pepper powder
1/2 tsp -garam masala
salt -as per taste

Ingredients:
____________
1.Cook rice with bayleaf and keep for cooling in the frige.By doing this they will not stick to each other.
2.In a big pan take some oil add jeera[cumin] and wait till it starts to splutter.
3.Now add all the spices and 1 tsp of oil and fry them for 3 mins.
4.Add chopped onions and fry till it turns slightly brown in colour.
5.Now add spinach to it and close the lid and allow it to cook for 3 mins.Then saute and add salt ,chilly powder and pepper powder to it and then add all the cooked rice.
6.Saute till each rice is coated with oil.
7.Now its ready to be served.

Chipotle Style Lemon Cilantro Rice


Well if you are a fan of chipotle food then this is a really good recipe for you to give a try.I usually go to chipotle to have my burrito bowl .There they serve the lemon cilantro rice which i really love.So thought of giving it a try and i turned out preparing it exactly the way they serve it.yummy with the citrus punch and the spiciness of jalapeno chillies in it.

Ingredients:
__________
Cooked rice - 4-5 cup
Onion - 1 cup finely chopped
Lemon juice - 2 tbsp
Lemon zest -1 1/2 tsp
Jalapeno - 1 big finely chopped
Cilantro -3 tsp
Salt -1 tsp
Oil -3 tsp


Method:
________
1.Take oil in a pan and then add onions and saute till it turns transparent.
2.Then add jalapeno to it and saute along with onions.
3.Add rice to the pan ,then the lemon zest and salt,give toss
4.Now add roughly chopped cilantro to the rice and mix it thoroughly and serve it hot.
5.This is ready to eat.

Mooli parata


Ingredients:
____________
Mooli - 1 big grated
Green chillies - 2 chopped finely and minced
Salt -1 tsp
Coriander powder - 1/2 tsp
Cumin powder - 1/2 tsp
chilly powder - 1/2 tsp
Turmeric powder -1/2 tsp
Mix all the above amd keep aside for stuffing

Now prepare the parata dough by using-
wheat flour -2 cups
salt -1/2 tsp
oil/ ghee - 1.5 tsp
water

Method:
_______
1.Prepare the dough using the above ingredients and kneed for 5 min properly.
2.Now roll it into small balls and prepare small roti out of these balls.
3. Stuff each with 1.5 tsp or 2 tsp of the stuffing which we have already prepared by mixing all ingredients.
4.Now cover it by the edges and roll it in wheat flour and make thin roti and bake in pan with little greasing using oil or butter.
5.The parata's bake easily and look awesome and are ready to eat.
