Mavina hannu Rasayana-Mango dessert



I just love summer as we get a variety of fruits and vegetables, very fresh and of differnt tastes.One such fruit which is loved by all is Mango.Its the king of all the fruits.Lovely juicy mangoes hmm..... just the name is enough for the mouth to water, just like my this simple cool recipe.As usual this is very easy and quick to prepare yet the taste is so promising.Without taking a lot i shall come straight to the recipe.

Ingredients:-
----------
Well ripe mangoes - 2-3 large
Coconut milk - 8 oz
Milk - 1cup
Jaggery - 3 tbsp
Brown sugar - 2 tsp
Cardammom - 1/2 tsp
Honey -2 tsp
Salt - 1 small pinch



Method:-
---------
1.Peal up the mangoes.It need not be too sweet. Slightly sour mangoes will also do.
2.Then cut it into small squares and keep aside
3.Squeeze up the pulp from the pith part that is the core and keep aside.
4.Now take milk ,coconut milk ,brown sugar,and mix properly add small pinck of salt and mix.Now grate or powder the jaggery and mix to this mixture properly.Adjust the sweetness to your taste.
5.You can add only brown sugar if you wish now add honey and cardammom and mix .
6.Add the mangoes to this liquid mixture with the pulp squeezed and mix roughly and cool it for altleast an hour or more before serving.Enjoy during this hot summer.

Yummy wheat peda's


This is a simple nutricious recipe prepared out of very few ingredients .Me and my hubby both love dharwad pedas a lot.Well wanted to eat them badly.so i thought of preparing something similar but with less calories.So here is my own creation of recipe which is healthy and nutritious well dont ask about the taste i can say its much better than the pedas too.You need not feel bad or guilty after eating a couple of these as it contains minimal fat in it.Enjoy the weekend with my this recipe friends.....

Ingredients:
----------
1.5 cup - wheat flour
1 cup - sugar
1/2 - cup milk
3-4 tsp - ghee
1/2 tsp- cardammom powder


Method:
--------
1.Take a heavy bottomed pan.Add 1-2 tsp of ghee and add the flour and fry for about 3-4 mins in medium flame or untill it smells good.
2.Then add sugar as per your taste and allow it to mix well with the flour.
3.Then add milk and continue stirring untill it forms a single mass and leaves the bottom when you stir.
4.Take a clean tray or plate and grease it with ghee.
5.Pour the mixture into this tray and aloow it to cool a bit .Then slowly apply ghee to your hand and start rolling into small balls and keep aside.
6.Spread some powdered sugar/cane sugar on a plate and roll the ball so that its coated with sugar all over .Then fill them into a airtight container .This will remain for about a month .But believe me will get empty by then as they are irresistable.Enjoy....

Rice Breakfast round up

Here are the simple recipes for a tasty and healthy btreakfast .One recipe and various different presentation and taste too...I bet you will love it ...just like me.Myself and N are not ones with sweet tooth.But this is a thing what we both loved .Its so soft tasty and smells great. Just try this and fall in love with it.Thats all i wanna say....





Ingredients:
----------
Rice - 3cups
Coconut - 1/2 cup
water -7 cups
Salt - as per taste

Method:-
--------
1.Soak the rice in warm water for a couple of hours .
2.Add the water used for soaking along with the rice to a blender and grind it to almost nice paste to the size of small rava or just like what we do for idli.Add the coconut grates at the end and turn for 30 secs.
3.Now add enough salt and the water mentioned above into a heavy bottomed pan.Then add the batter of rice and coconut to it and keep stirring.Let the burner be in medium only because the rice batter cooks very quickly.Keep stirring right from the bottom.The lumps will form dont worry keep mashing them and do not stop stirring.
4.This will take about 8-10 mins.Wait till all the mixture forms a single mass and the consistancy should be enough to roll out into small balls.Then remove from the heat .

This is the Basic dough for all the up comming dishes.


Rice dumplings / Pundi/akki unde:-
-----------------------------


1.Keep a bowl of cold water with few ice cubes next to you.
2.Roll out the cooked rice mixture into small balls .Hands will get hot so frequenty dip your hands in cold water.This will help your hands from getting too hot and will also help to form a nice smooth pundi.
3.Now cook or steam the pundi's in the cooker just like idli for 10-15 mins.Thens erve with hot curry out of spinach ,redleaves and black eye bean curry{bendi}.hmm just love it .
Can enjoy it with spicy chutny or just oil and pickle...



Sweet undde:-
-----------
This is also called modaka in some place .We genarally prepare it during chowthi also..Well for me i prepare it whenever i crave for it.



Other than the comman cooked rice mixture we require following also:
----------------------------------------------------------
1/2 cup -coconut grates
3 tbsp - jaggery/ sugar[ i have used jaggery]
1/4 tsp - cardammom powder


Method;
--------
-Mix all the ingredients together
-MAke a small ball out of teh rice mixture .
-Then press and flatten it andthen stuff the coconut jaggery stuffing to it about a spoon full and then cover the edges just like what we do for parata and make a ball again
-Steam cook again in the same way as pundi for 10-15 mins.
-Enjoy when hot or cooled properly any time they taste supperb.

Hallitu payasa:-
------------

Same cooked rice dough can be used.




Ingredients:
----------
10-14- small cooked rice dumplings
4 ounces- milk
4 ounces-coconut milk
4 ounces-water
Jaggery -as per your taste
1/4 tsp- cardammom powder


Method:-
-------
-Make small balls or thin cylindrical threads by rolling in between your hands or like chakkuli, out of the same dough and then steam cook it for 10 mins.
-Then take a vessel add water, jaggery, cardammom powder to it and finallywhen the jaggery melts add coconut milk,milk and then the rice balls or the small thin cylindrical treads into this mixture and bring to a boil.
-Serve hot or cool and serve like kheer.Tastes yummy...

Banana cake



I would like to wish all my fellow blog mets a very special and happy valentine day thro' my recipe of cake which fits in perfectly on this eve of valentine day.This is a simple ,less fat,yummy cake recipe just like my previous chocolate cake recipe.

Ingredients:
----------
Banana - 3 fully ripe
All purposef lour-1 3/4 cup
Sugar-3/4 cup
butter-1/3 cup
salt -1/2 tsp
milk-3/4 cup
baking soda-1 tsp
baking powder-1 tsp


Method:
-------
1.Seave all the dry ingredients and keep aside.Preheat the oven to 350 deg F.
2.Grease the cake mould and dust with a little flour and keep aside.
3.Mash all the ripen banana's and keep aside.
4.Take the melted butter and sugar and mix them properly in the food processor untill all the sugar has incorporated properly.If you do not have a food processor just wisk it thoroughly with a beater.
5.Then add banana's to the butter mixture and blend it .Then add all the ry ingredients little by little with the milk and for a nice mixture.do not over work it.
6.Then remove it into the greased mould and bake for about 45 mins or until done.


You can also do a bit of froasting if its a special occation like this day .

Ingredients:
---------
Whip Cream- 1 cup[fresh cream will also be cood or icing cream also]
Almonds-6 sliced
Chocolate syrup-3 spoons
chunks and strips of pine apple


Method
-------
-Slice up the cale into 3 thin layers.
-Easy whay to do it place the cake in a plate and then insert the knife to almost centre from the side planning the thickness appropriately.Then slowly keep rotating the plate not the cake this helps to form a proper uniform layer and then layer each slices with a coat of cool whip then chunks of pineapple and nuts.
-Then keep another layer and repat the same.
-Any tinned or fresh fruits can be used.I just love pine apple and this makes a wonderful combination.
-Then cover up entire cake with cream and chunks off dryfruit and chocolate syrup..This is ready.I dought if anyone can resist eating cake.Enjoy.

Banana Payasam


There are totally 6 varities of tastes and sweet is one among them.Well i aways like to have spicy things along with that like sweets as a second option.There are some perticular sweets which i like to have.Banana payasam in one among those.Banana is a healthy fruit ,easily avilable and very cheap indeed.This is a perticular varity of fruit which is available through out the year and we need not wait for the season.It can be eaten raw by preparing wonderful curries and riped banan's are simple devine when added to any sweetdishes it enhances the flavour and gives a peculiar varity of richness.
I had some guests comming over to my house this weekend and had no time to prepare sweet.I saw some riped banana's in my counter top so thought of preparing something out of them.As it hardly takes 15 minutes to prepare this sweet dish and the ingredients required is also so simple andminimali prepared itIt came out so good that all of my guest loved it and wrotedown the recipe.We all had fun and the speciality is nobody could make out it was prepared out of banana.

Ingredients:
----------
Well ripe banana's- 2 large
Milk - 2 cups
water -1/2 cup
Jaggery -1/2 cup[powdered]
Cardammom -1/2 tsp
saffron -2 piches
Butter -3 tsp


Method:
-------
1.Mash the riped banana's with hand so as to form a rough paste.
2.Take a pan add 2 tsp of butter to it and allow it to melt.Then add the banana paste to it and fry till it turns slighty brown.
3.Then add jaggery to it and keep mixing properly when all the jaggery is properly incorporated ,add milk and water to it and simmer and allow it to cook for 5 mins
4.Take 1 tsp of butter in a bowl and add1 tsp each of scliced almounds,cashews and raisins to it and roast it in microwave.
5.Now add the saffron to the payasam and bring to a boil.then add cardammom powder and butter roasted dry fruits to it and mix properly and bring to aboil and allow it to enhance the flavour by increasing the heat and cooking for another 4 mins.
6.Serve hot or cold as kheer as per your likings.

Besan vanilla bites



This is a recipe, which i was inspired by saffron hut.Well just a week before we had lots of jalebi's in our house.Normally me and my hubby dont like sweets so much.But we both love jalebi's a lot. Those chrunchy,sweet juicy jalebi's are my altime favorite.So we ate up all of them and got eddicted to sweets.So i wanted to prepare some easy recipe which had very little fat in it.So thought of preparing this dish out of besan which i has a lot stocked up in my pantry.Believe me friends i must confess it came out that good that i just melts within no minute in your mouth .hmm...nothing much but cant help saying kya kare control nahi hota.....so here i'm sharing this recipe with you all.

Ingredients:
____________
Besan[chick peas powder]- 1 cup
Sugar - 1 cup
Cardammon - 1/2 tsp
Milk - 2 tbsp
butter - 3 tsp
almonds - 6 sliced finely
Vanilla extract - 1 tsp

Method:
_________
1.Take a heavy bottom pan and melt the butter.
2.Then roast the besan powder under very low heat till all the raw smell goes off and it turns to bright golden colour.
3.Now add sugar and mix properly then add milk and continue to saute.
4.Just when the mixture starts to bubble up add 1 tsp of vanilla extractand cardammon
5.Remove it from the fire just when the mixture starts leaving the edges and forms a single mass when the pan is kept slant.6.At this point remove it and pour into a tray which must be greased with butter.Allow it to cool fully and then cut it into small squares.This can be preserved for atleast a month but believe me you will finish it before that.

Kesar Khseera



This is a tasty recipe which is very famous in South india.It has an nice flavour of saffron ,and richness of the milk in it.It has a beautiful colour which is again due to saffron.

Ingredients:
____________
Sooji - 1 cup
Milk - 3 cup
Water - 1 cup
Sugar - 2 cups
Cashews-2 tsp
Drygrapes-2 tsp
Almonds - 1 tsp
ghee - 1/2 cup

Method:
_______
1.Take a large heavy bottom pan,Add 1/4 cup of ghee into it and add sooji to it and fry for about 5 mins till it turns light brown.
2.Now add milk and water and keep stirring it in medium heat.
3.Just when the liquids dry off add remaining ghee to it,then add the saffron soaked in warm milk and keep stirring it till the cooked sooji starts leaving the edges and forms a non-sticking mixture.and leaves the surface as a single mass.
4.Now add the ghee roasted dry fruits and mix properly.
5.Remove and place in a glass bowl.
6.It should be eaten when hot.
7.It will last for about 10-15 mins when refrigerated.

Sabakki Payasam (Sabudana Kheer)



Here is a delicious recipe for this vacation.Its a creamy kheer with bubbly sabudana,rich dryfruits,creamy milk all combined together with sweet smelling fragrance of cardammon and Saffron in it.

Ingredients:
___________
Sabudana-1/3 cup
Milk - 1 cup
Water -1/2 cup
Cardamon -2-3 powdered
Safron -2 pinch
Sugar - 1/2 cup
Salt - 1 pinch
Almond - 3-4 sliced
Raisens - 7-8


Method:
_________
1.Pressure cook the sabudana with water.
2.To sabudana add milk and sugar and bring to a boil.Now add sugar and ghee roasted dried fruits and simmer and cook for about 10 mins.
3.Add safron which was soaked in warm milk and increase the heat and again bring to a boil.
4.Garnish with saffron,cardamon and little almonds on the top .
5.Serve hot or chill and serve cool like a kheer.Easy ,quick and delicious.Enjoy... Happy X-mas

Rice pudding




Friends this is a simple famous recipe which everyone would like to have and if one could prepare it at home so easily then why not give a try to this delicious recipe.....

Ingredients:
___________
Raw rice - 1 cup
Milk - 3 cups
Bay leaves - 2
Sugar - 2 cups
Brown sugar- 2tsp
jaggery - 2tsp( grated)
Cardammon- 4
Cashews - 2 tsps
dry grapes - 2 tsp
Almound - for garnishing
1tsp -butter
safron - 3 pinch( soaked in warm milk)


Method:
________
1.First take butter in a pan.Let it melt a bit and then add rice ,bayleaves.Then toss it properly so that all rice grannules are coated with ghee.
2.Now add 3 cups of milk and then allow the rice to cook in the milk for about 10 minutes.Stir it occasionally.
3.Now add sugar , brown sugar, powdered jaggery.
4.Now add cardammom, safron and add water or excess milk to this .
5.Cook till rice cooks completly in the milk.If desired you can also add heavy cream or condenesed milk for extra richness.
6.Garnish the kheer with ghee roasted chashews and raisens.

Banana Halva


Here is a recipe of a sweet dish which is very famous in the south Indian states especially Karnataka and Kerala. It smells awesome and even the taste is so good. The mouth watering taste of this recipe makes you get edicted to it. The recipe is very easy and you can never get it wrong.It contains less fat and good for health too.
Banana is considered to be the most nutricious fruit .Its rich in many salts and minerals which are very essential to our body like pottasium and zincBanana is a rich source of carbohydrates and fat .It also softens the stools and helps in pushing out the wastes from our body timely and in a easy manner.Hence one must always involve it in thier routine diet may be in different forms if desired.

Required Ingredients:
_______________________
10 big bananas - Mashed properly with hand
3 cups - sugar
1 tsp - cardammon
4 Tsp - ghee
2tsp - ghee tosted cashews



Method:
_______
1.Take a heavy bottomed pan.Heat it and then add the mashed bananas to this heated pan
2.Continously stir it till it turns slightly brown now add 3 cups of sugar
3.Continue stirring it till it turns dark brown and it starts leaving the bottom of the pan and forms a combined single mass.
4.Now add ghee and stir ,then add the cashews and stir.Be carefull at this pointTO prevent it from stick to the bottom of the pan.
5.Greese a plate with oil/ butter /ghee and keep aside.
6. Now pour the mass of the banana into this plate and allow it to cool.When its almost cool draw lines in desired shapes and allow it to cool completly then cut and store in a box.It lasts for more than a month .
