Goli Baje

Ingredients:-
---------------
Maida  - 2 Cups
Curd                        - 1/2 cup
Green chilly            -  2-3[as per your taste]
  Hing                      - a pinch
Curry leaves           -  5 to 6
Cooking Soda         -  a pinch
Sugar                      - 1 Table spoon
Salt                         -  as required
Oil                          -  for deep frying (1 Cup)



Method:-
----------
1. Add maida, sugar and salt in a big bowl. 
2. Add curd and mix it nicely (let it be thick)and then keep aside to rest   for 10 minutes. 
3. Wash Green chilly and curry leaves and chop it finely and set aside.
4.  Add green chilly, hing and curry leaves and mix it well. 
5. Pre heat the oil for deep frying. (on medium flame). 
6. Just before frying add a pinch of cooking soda and mix it well. 
7. Take a handful of batter and leave it in oil so as to form  small balls shape. 
8.  Fry on both sides till they turn golden color .
9. Remove and place  it on a kitchen towel/tissue to remove extra oil. 
10.Repeat the same with the rest of the batter. 
11. Serve Hot Goli baje with ketch up or any kind of  coconut chutney you prepared.

Stuffed bread rolls


Ingredients:-
-------------
7-8 bread slices[remove the edges]
2-3 large- boiled mashed  potatoes
1 tbsp   -  chopped fresh mint leaves
1/2 cup - frozen thawed peas
1 large  - onion chopped
1/2 tsp -  ginger garlic paste
1 tsp    -  garam masala
1/4 tsp - turmeric powder
1/4 tsp - chilly powder
salt       -  as per taste
1/2 tsp  - cumin seeds[jeera]
1/4 tsp  - chat powder
1-2 tsp  - oil/butter/ghee for toasting

Method:-
---------
1.In a deep nonstick pan
 take 1tsp oil ,add cumin and afetr a min add chopped onions,ginger garlic paste and saute for 1-2 mins . Then add peas and add turmeric powder,chilly powder, garam masala powder and mix properly.
2. In a bowl take the boiled mashed potato and then add the above mixture add  chat powder and salt and mix properly. Now add chopped mint leaves and keep aside.
3.. Wet both hands and then tap the bread so as to make it slightly moist. Put the potato mixture about a spoon full in the centre and then slowly roll with wet hands and seal the edges properly.
4. Take a non stick pan. To it add a little bit of oil or ghee and slowly roast the bread roll on all sides so that it crunches out. Do remember to keep the flame in medium.
5. Enjoy hot with desired chutney or simple ketchup.

Jeeguje Podi


Hey friends as i promised im back with one more recipe out of bread fruit. So here i am withYummy crispy crunchy best for a cold weather or weekend munchies too.Some thimes i feel its ok to forget you diet balance and just relish a wonderful munchies like this....
Its cripsy yet creamy and soft inside...Hmm just irresistable.....

Ingredients:
-----------
Bread fruit slices- 15-20 thinly sliced slices
Besan- 1/4 cup
Rice powder-1/4 cup
Rava- 1/4 cup
Corn flour- 2tsp
Chilly powder-3 tsp
Hing- 1/4 tsp
Cumin-1 tsp
Oil - for deep fry
Salt

Method:-
-------
1.Take all the dry ingredients in a bowl, add 2 tsp of heated oil .This oil helps to prevent the pakoda from absorbing more of oil and makes the pakoda taste good.
2.Mix all the dry ingredients and make a batter adding enough water.
3.Take a pan and heta up the oil.
4.Dip the thin slices of bread fruit in the batter and deep fry them till they turn crisp and nice.
5.Remove them from oil and place over the paper towel to remove excess of oil.Serve hot with tomato sauce.



The same batter can be used to prepare any other pakoda's.I had madesome cauliflower pakoda's too just have alook at those too.....Enjoy.

Aloo Tikki



Well this weekend was really a nice one for us.We had nice fun being at home itself.the weather was very good but then my hubby was really busy with his work.So i wanted to deviate his mind from work.So thought of preparing something chat-pata which will be his favorite too...As it was weekend and i was felling lazy wanted to prepare something which is quick but yet tasty..SO prepared some jatpat aloo tikki.As my plans my hubby couldnt resisit and came running to kitchen.We took all the tikki's to out patio and had the fresh and hot dipped in tomato ketchep.Well had so many tikki's and was like a mini picnic in our own patio we were refreshing our childhood days and those nice moments of our life.all to gether enjoyed so much because of this aloo tikki.So thought of posting the same here...

Ingredients:-
----------
Potato- 3 large cooked
Ginger garlic paste- 2 tsp
Chilly powder- 1 tsp
Pepper powder- 1/2 tsp
Kitchen king masala- 1 tsp
Coriander powder- 1/2 tsp
Cumin- 1 tsp
Green chillies- 2 freshily minced
Freahly chopped coriander leaves[optional]
Bread slices-6-8
Oil 3-4 tsp


Method:
--------
1.Mash all the potatoes .Tear the bread into tiny chunks and add them to potatoes.
2.Add kitchen king masala,chilly powder,coriander powder,pepper,cumin,salt chillies and mix properly into a single mixture so as to form a chapatti dough like consistency.
3.Make small patties out of this dough like mixture by rolling into small balls and then flatening them.
4.Then take a large non stick pan or even a iron pan and grease it whit oil and place these patties and grease the other side also with a little bit of oil and fip them and bake on other side to untill they turn crunchy on both sides.
5.Remove from the pan and serve hot with tomato sauce or fresh chutney.

Spicy Spinach Rice Cake


This a simple tasty recipe which i have tried for the first time.I just love patra and wanted to eat them.So went searching for those leaves to all my nearby grosery shops and did not find it.I had just seen fresh palak leaves and thought of preparing something out of it and bought them home.Finnaly thought of giving a try with this new recipe.SO i have prepared the same recipe of patra with a bit of change in ingredients and replaced the patra leaves by palak

Ingredients:-
----------
Spinach- 1 big bunch
Rice -2 cups
Masoor dal-2/3 cup
split masoor dal-1/4 cup
Poha-1/2 cup
coconut 2/3 cup
dry chillies-40-50[as per your taste]
coriander seeds-3 tsp
Hing-1/4 tsp
tamarind -size of one medium sized gooseberry[1 big spoon if pulp]
salt as per taste


Method:
-------
1. Wash, clean,Chop up the spinach leaves into thin stripes and keep aside.
2.Saok rice and masoor dal in warm water for about 2 hrs.
3.Bleand masoor dal, coconut,chillies,poha into almost idle batter consistency or even smoother.
4. Then make a course paste out of rice and mix both the batters.
5.Mix the spinach leaves to this abtter and for a uniform mixture.
6.Cook in a cooker just like idle without putting the whistle for about 45 min s or until done.

Rich finger food


I had bought these sour bread what we get in the general stores this week and thought of preparing something different out of it.Had nothing much in my fridge too to prepare something gread.Then saw the greengram spouted up in the counter top.That time a different idea flashed to me.But was scared to try one.Then thought i'll give a try so i tried it out.and believe me i feel i need to confess it tasted so good feel like having it daily .Its so tasty,less fat recipe which tastes so good and its so filling it can be eaten as main course itself.

Ingredients:
----------
tomatoes -2 large
Onion -1 cup[finely chopped]
Potatoes - 2 medium sized[boiled]
greengram - 1 cup [already spouted]
garlic - 1 large clove
green chilly - 1 large
mayonnaise - 2 tsp
chilly flakes-1 tsp
salt and pepper for seasoning
Cheese - 2 tsp




Method:
--------
1.Take greengram sprouts ,garlic , chilly ,salt and blend into rough paste.
2.Take mayonnaise and smear it to the loaf of sour bread.Then smear the sprout paste over it forming another thick layer.You can use butter instead of mayonnaise.
3.Then sclice up the tomatoes and potatoes very thinly and place it in a line fashion ,spinkle the onions over this then smear it with a rough layer of spout again and sprinkle a bit of cheese,season with salt and pepper
4.Bake it in preheated oven of about 350 deg for 8-10 mins.
5.Remove and serve hot with soup or just like that.
6.The dish just melts and has a crispy crunch because of baking and the roasted vegetables simply tastes superb.Enjoy

Cream of broccoli



This recipe is my all time favorite.Its quite filling and has got the richness and creaminess of milk and the chewy broccholi in it.Its best to keep us warm in this winter.

Ingredients:
____________
Milk - 2 cups
Broccoli - 1 cup
Garlic powder -1tsp
Salt - 1 tsp
Onion powder- 1 tsp
Pepper powder- 1 tsp
mayonnaise - 1 tsp[optional -for extra richness and a good flavour]
Corn starch - 1/2 tsp

Ingredients:

1.Chop up all the broccoli
2.Take a pan add all the milk and when it becomes hot add salt,pepper and stir for 3 mins .
3.Then add onion and garlic powder,Simmer and cook for 2 mins.
4.Add all the broccoli ,mayonnaise and bring to a boil.
5.Serve hot with some country bread as sides

Patra fry




This is a best finger food or a side dish.Can also be used as an appetizer.Here you can use the left over patarde and make a yummy mouthwatering fingerfood.easy and jatpat.

Ingredients:

Pre made patrade
Oil -3-4 tsp


Methods:
_________
1.Cut the pre made patrade into small thin squares.
2.Now heat a pan and place these squares over it, then grease it with coconut oil.
3Then roast it on both sides till it turns slightly black and crunchy.
4.This is ready to eat now.

Patrade (Patra)



Here is the recipe from South India.This is a well known Konkani dish which is my favorite too.Believe me friends you will love it once you try it out.I can skip my meals days together for this patra dish.Yummy ........


Ingredients:
_________
Patra leaves[colocasia]-10-15
rice -2 cups
tur dal -1/2 cup
coconut -1 cup
dry chillies -15
Hing -1/2 tsp[if powder]
Coriander seeds -3 tsp
salt













Method:
________
1.Soak rice and dal in warm water for about 2 hrs.
2.Fry coriander and chillies in 1tsp of oil for about 2 minutes.
3.Then blend the rice and dal with coconut,chillies ,coriander into a rough batter.
4.Add hing ,and salt to this.
5.Wash ,clean and wipe the leaves,then place the larger leaf at the bottom and pile up the small ones one after the other by coating the batteron the surface.Pile up about 3-4 leaves












6.Then keep folding it like a hand kerchief and coat each edge as you do this and then finally the outer surface. and cook in the cooker like idles.
7.Cook for about 1/2 hr without the whistle[weight]
8.Remove and eat with a little coconut oil drisseled over it.It also tastes good with curd rice or anything you wish.

Garlic bread


This is a recipe which you can have as a appitizer,breakfast, or as sides with the soup,i just have it at any time of the day.Its a fast recipe where you dont need to get any thing extra from the store.yummy.....

Ingrediets:

Bread / bun/hotdog bun- 2-3 scliced
Butter - 3tsp
Garlic grates - 1 tps
Garlic powder - 1/2 tsp
Salt - as per taste
Basil powder - 1 tsp
Coriander leaves -finely chopped
Pepper powder - 1/2 tsp
Paprika powder

Method:
_______
1.take the bun and slice it slantly
2.Mix butter, salt,pepper,basil,garlic grates/minced,garlic powder for extra garlic flavour.
3.butter up all the slices and then garnish with paprika and coriander leaves.
4.Now place them over a cookie sheet and pop it in the oven for about 8 min at about 350 degree.
5.Serve hot with coffee or soup

Beetroot Raita


Here is a simple side dish which requires very less afforts.Its a complete dish with the combination of all tastes in it.It looks too good with the pretty pink colour of the beetroot and the creaminess of the fresh yogurt which is blended into it.

Ingredients:

Beetroot - 1 grated
Onion - 1/2 cup finely chopped
Green chillies - 2 finely chopped
Yogurt/plain curds - 1.5 cups
Chilly powder - 1/2 tsp
Jeera - 1/2 tsp
salt - as per taste
Urad dal - 1/2 tsp
Mustard - 1 tsp
Oil -1/2 tsp
Dry chillies - 2
Curry leaves - 4-5

Method:

1.Take grated beetroot & greenchillies in a bowl add a bit of salt ,chillypowder and cook in microwave for 3 mins.
2.Now mix the onions to the bowl
3.Take some oil in a pan and put all the other remaining ingredients and just when the mustards starts spluttering add it to the bowl with beetroot and mix everything uniformly.
4. Now add curds and mix properly.The dish is ready to be served.

Gobi Manchuri



This is a recipe which all will like to try. Its a spicy sour appetizer with lots of onions ,garlic and ginger in it.

Ingredients:
___________
Gobi - 3 cups(washes ,cut and dried)
Onion - 1 large
Greenchillies- 2 large finely chopped
Garlic - 3tsp finely chopped
Ginger -2 tsp finely chopped
Coriander leaves-3tsp
Tomato sauce-8 oz
Soya sauce-1/2 cup
Corn flour- 3/4 cup
All purpose flour-3/4 cup
Chilly powder- 2tsp
turmeric powder-1/2 tsp
paprica powder-1/2 tsp
salt-as per taste
oil - for deep fry


Method:

1.Prepare a batter out of Corn flour ,maida [All purpose flour] chilly powder,turmeric powder, paprica and salt
2.Now dip the gobi in this batter and deep fry and keep it aside.
3.Take a pan and add about 3 tsp of oil to it.Then add onions, garlic, ginger,green chillies and fry them till the onions turn slightly brown .Then remove and keep aside .
4.Now add the tomato sauce ,to this also add soya sauce,1/2 tsp of chilly powder and saute for about 8 minutes .
5.Then when it starts to bubble add all the fried gobi and the onion mixture and saute it nicely.
6 Garnish with fresh coriander leaves and its ready to be served.


we can fry the gobi's the previous day and keep it in a airtight container in the refrigerator and just before the guests arrive we can mix it in the sauce and rest can be prepared freshly and served hot.By this way we can save a lot of time and enjoy with your guests also.

Mini pizza just for kids


This is a simple pizza recipe which can be used as a finger food or an appitizer or a mini pizza for small kids where in you can hide some veggies.

Ingredients:
____________
Pizza dough
Cheese
Tomatoes
Spinach
Chilly flakes
salt and pepper[Exceptional}

Method:
_______
1.Roll the pizza dough into think chapatti like sheets.
2.Now using a cookie cutter cut off small circles just like how we do for cookie and make dimples in it using a fork.
3.Place it in the cookie sheet and pop it in the preheated oven , 350degree for 8 mins.
4.Remove it and apply tomato sauce in the base ,then a layer of grated cheese then some strips of spinach over it finally place a whole cherry tomato or slice it into 1/2 and again bake for about 5 mins.
5.Now the cheesy mini pizza is ready to melt in your mouth.Kids are really gonna love it believe me.

Spicy Assorted vegetables

Here is a recipe for an easy and healthy appitizer.It contains a variety of vitamins like
Vitamin A from carrots,tomatoes,herbs [dried],Celery
Vitamin B complex-from broccholi,beans,soya,celery
Vitamin D&K-from the soya sause
Iron -Onions,dried herbs
Carbohydrates-from the potatoes
Garlic -which helps in killing the cholesterol
Here is the recipe for weight watchers also.

Ingredients:
_____________
Broccholi - 1cup
carrots - 1cup
Diced potaoes - 1 cup
Diced tomatoes- 1 cup
beans - 1 cup
Onion - 1 large
garlic - 2-3 cloves
celery - 1 cup
cauliflower - 1cup
Salt -1 tsp
Pepper powder-1tsp
Italian seasoning-1/2 tsp
Basil powder-1/2 tsp
Soya sauce-3tsp
White vineger-1 tsp


Method:

1. First take a pan or a skillet.Add about 1 1/2 tsp of olive oil or simple vegetable oil.
2. Add chopped carrot and saute them .Then add potatoes, celery ,cauliflower,beans ,broccholi,onion and garlic .
3.Season with salt, pepper, vineger and soya sauce.
4.cook until the edges of veggies turn brown.
5.Then add 1/2 tsp each of italian seasoning and basil(If you dont have these then 1/2 tsp of freshly chopped mint leaves or even kasoori methi,or even the fresh coriander leaves can be added.)
6.Serve as an appetizer or even as a side dish with rice.
