Stuffed bread rolls


Ingredients:-
-------------
7-8 bread slices[remove the edges]
2-3 large- boiled mashed  potatoes
1 tbsp   -  chopped fresh mint leaves
1/2 cup - frozen thawed peas
1 large  - onion chopped
1/2 tsp -  ginger garlic paste
1 tsp    -  garam masala
1/4 tsp - turmeric powder
1/4 tsp - chilly powder
salt       -  as per taste
1/2 tsp  - cumin seeds[jeera]
1/4 tsp  - chat powder
1-2 tsp  - oil/butter/ghee for toasting

Method:-
---------
1.In a deep nonstick pan
 take 1tsp oil ,add cumin and afetr a min add chopped onions,ginger garlic paste and saute for 1-2 mins . Then add peas and add turmeric powder,chilly powder, garam masala powder and mix properly.
2. In a bowl take the boiled mashed potato and then add the above mixture add  chat powder and salt and mix properly. Now add chopped mint leaves and keep aside.
3.. Wet both hands and then tap the bread so as to make it slightly moist. Put the potato mixture about a spoon full in the centre and then slowly roll with wet hands and seal the edges properly.
4. Take a non stick pan. To it add a little bit of oil or ghee and slowly roast the bread roll on all sides so that it crunches out. Do remember to keep the flame in medium.
5. Enjoy hot with desired chutney or simple ketchup.

Vegetarian Hot dog with vegetarian sausages



Ingredients:-
-----------
potatoes                                   - 2  medium sized                 
 
Carrots                                    - 1 large

Beetroot                                 -  1 medium size

hotdog buns                            -  4-5

Day old bread / only crust       -  heaped 1 cup [ 4-5 sclices]

Bell peppers                          - 1 small

Onions                                  -  1/2 cup chopped

Garlic                                    - 3-4 cloves

red chilles                            - 2-3

Garam masala                        -   1tsp

Chilly powder                         -    1 tsp

Turmeric                                -    1/2 tsp

Salt                                       - as per taste

Jeera                                     -  1 tsp

Coriander seeds                     -  1tsp

Soya flour                              -  1/2 cup

Wheat flour                           -  1 cups

Oil                                         -  2tbsp

Method:-
----------
1. Wash and peal potatoes,carrots and beets . Slice then to thin stripes and steam cook ,keep aside for cooling.





2. In a pan  take about a tsp of oil,then when it becomes hot add jeera . When the jeera starts to splutter add onions ,ginger, garlic,coriander seeds keep mixing  for about 2 mins till the raw smell goes off.

3. Now  using a blender or food processor   blend the vegetables, with the small chunks of bread and the above onion mixture to a chunky paste. 

4. To the above paste add the 2 flours , enough salt, dry masala and make a soft dough without adding water.

5. Grease  the vessel in which you want to steam these dougs properly. Take a big lime sized ball of the dough and shape them in sausage shapes and place slowly in the greases vessel and steam cook till done.it will take about 8-10 minutes to get cooked properly. It will change in color and when you stick in a knife it should come out clear.








6. Allow it to cool and then in a non stick pan add a few drops of oil and saute these sausage about 3 at a time till the outer surface becomes a bit charred and crusty.



7. Take a hot dog  bun and smear with butter totally optional . Then place the sausage . It can be topped with onions and bell peppers or picked cucumbers or just tomato sauce and mustard and enjoyed when its hot.....


8.You can make this sausage ahead of time and freeze it. It can also be used in many more dishes or yummy recipes like fried rice singapore style or in north indian curries  which will be my future post. so do not forget to make in large quantity as it will be a time saver  for your next dishes

Note:-[ tips]
1. If you don't have fresh bread you can use old bread kept in freezer. i save the bread crust in freezer and use them as bread crumps or as a binding agent in cutlet, hara bara kabaab etc.even here i have used just the bread edges and end slices.. one more use for the wasted edges in bread sandwiches so dont forget to save them.

2. If you dont have soya flour you can use only wheat or maida. You can even use only soya flour . In all the ways it will taste great. But just adjust the flour to form a shape able mass.

Gulli Appam[urad daal savory appam]



Ingredients:-
-------------
ural daal - 1 cup
idli rava - 2 cups
yeast - 1 tsp
onion - 1 medium size
grated carrots - 1 large
coriander leaves- 2 tbsp
green chillies - 2-3 [optional]
salt - as per taste
bell peppers - 3 tbsp

Method:-
-------
1.Soak up the urad daal over night or in hot water for 2-3 hrs.

2. Grind the urad daal to form a fine smooth batter.Add idli rava to the batter and keep adding water little by little so as to form a batterlike idle batter.

3. Then add the yeast[mix yeast with luke warm water and keep aside for 2-3 mins once it becomes pasty its ready to be added to the batter].

NOTE:-
-----
YOU CAN ENTIRELY SKIP THIS STEP BY USING A STORE BOUGHT IDLI OR DOSA BATTER.

4.Chop up the vegetables very fine,grate the carrots and keep ready.

5.Salt the batter as per taste . Add all the veggies to the batter.

6.Now take the appam tava and grease it with a tiny drop of oil in all the chambers.



7.Fill all the chambers up to 3/4 full with the batter. Cover and cook for 1 min in medium flame.

8.Now slowly release the edges and flip it up side down. Do not cover ,cook for another min or until done.

9 Serve warm or room temperature with desired chutney or can be had as it is.

Kadle uppukari




Ingredients:-
--------------
Black channa - 2 cup
oil - 1tbsp
mustard seeds - 1 tsp
urad dal - 1/2 tsp
dry red chillies - 1-2 broken
fresh coconut grates- 1tbsp
salt - as per taste
chilly powder - 1.5 tsp
hing - 1.4 tsp
jaggery - 2 tsp






Method :-
--------
1.Soak the dry channa overnight in water and pressure cook them adding little salt until tender.I have cooked for 3 whistle.

2. In a pan add oil and then to it add mustard seeds,urad dal,broken red chillies and curry leaves. wait till the mustard seeds starts to splutter. Then add hing to the oil.

3. Then add the cooked channa with the water ,adjust salt to taste ,add chilly powder. Cover and cook for 5 mins.

4.Switch off the heat. Add freshly grated coconut grates and cover it.Mix when ready to serve.

Instant oats idlies

This is a recipe which i cant wait to share with my friends. Believe me my friends they came out so good and fluffy.It not only looks good but the taste is unforgetable. Even my three year old ate 5-6 idli without any fuss. I have got a special liking towards oats. Always try to use it in different ways to use it in various foodies. I just like the flavour what it adds. Yumm....I started to use it forcefully thinking its good for health . But now im so addicted to the taste what it renders. I have prepared a bunch of items but guess this is the best and even the upma. I will post the recipe soon. Till then enjoy trying these idli






Ingredients:-
-----------
Oats - 1.5 cup[ I used steel cut oats ]
Sooji coarse - 3/4 cup
curds - 1.25 cups
water - 1 cup
cooking soda - 1/4 tsp
salt - 1 tsp or as per taste
Olive oil - 1 tsp




Method:-
-------
1. Dry roast oats in a non stick pan for around 4-5 mins till you can smell the aroma. Keep it on the side to cool.
2. Dry roast sooji/samolina for about 5 mins till it turns slightly brown,allow to cool.
3. Now finely powder the roasted oats using a blender.
4. Take a large mixing bowl,add the oats powder,samolina,salt curds and water.Adjust water as per needs .
5. Batter will resemble idli batter But it will be a bit slimmy .
6. Add the cooking soda and mix well and keep aside for 5 mins.
7. Now greese all the idli trays with litlle bit of oil and pour the batter uniformly on all the trays.
8. Steam cook for about 8-10 mins .Immerse a tooth prick to the centre and if it comes out clean the idli is done.
9. Remove and serve warm with sambar or chutney on the side.
10. Enjoy warm or room temperature.

Ubbu Rotti And Alasande Bendhi



This is a traditional recipe which we have been relishing since we were born. Really a finger licking recipe i say.This dish should be enjoyed with a spicy curry made out of long beans or chineese spinach itself. Just an irresistable taste and satisfying one to the soul.Hmm......just the simple discription of this rotti makes my saliva to dribble down.I just had 3-4 rotti just now in the afternoon and still feel like having some more although there is not space left in my belly.Well lemme just come down to the ingredients and method with some mouthwatering pictures of this delightful dish.


UBBU ROTTI:
========

Ingredients:-
---------
White rice - 1 cup
Boiled rice - 2 cups
Jeera - 1 tbsp
Salt - as per taste

Method:-
_________
1.Soak the raw rice in hot water overnight.

2.Now grind this adding no water or very little water into a smooth batter.As i had no grinder i used normal 12 speed blender.Hence i had to add a little bit of water.


3.Hint:- if your dough becomes water then no problem just empty it into a pan and keep it in a stove and keep stirring untill the mixture becomes some what hard so that small ball can be rolled out from it.

4.
Now roll out small lemon sized balls and press in into small poori sized roti by keeping between two greased plastic sheets and pressing with a flat plate.
5.Bake them over a hot pan until they are semi cooked , then put them over direct heat if you have burners in your stove or else do as you do to cook a phulka.

6.Now collect the rottis in a dish placed with a thick tissue or a cloth.
7.Good to relish when its very hot with the long beans bendhi


Bendhi:
======


Ingredients:
---------
Long beans - 1 bundle
Black eye beans- 1 cup[ cooked],optional
Coriander seeds - 1 tbsp
Urad dal - 1 tsp
Cumin - 1tsp
Shot red chillies - 6-7[as per your taste]
Turmeric powder - a pinch
Chilly powder - ''
Coconut grates - 1/2 cup
Tamarind paste - 1/4 tsp
Jaggery - 1 tsp



Method:-
-----
1.Chop up the long beans into 1.5 inch big pieces ,add little water , a pinch of salt,chilly powder and turmeric powder and cook them till they turn tender.
2.Take 1-2 drops of oil in a small pan and roast the chillies,then add coriander,urad dhal,cumin to it a dry roast them for 1 min.
3.Add them to a blender with 1/2 cup of coconut grates and tamarind and blend them into paste form adding little water.
4.Now add this paste to the cooked long beans and add already cooked black eye beans and season with enough salt and jaggery and bring to a boil.
5.Now take about 1/2 tsp of oil in a small pan add mustard seeds and just when it stats to splutter add curry leaves and pour it to the curry .Again bring the curry to a boil after thorough stirring.

Enjoy hot hot ubbu rotti with this bendhi on this cold winter.

Spongy Pan-cakes[No eggs]


Pancakes is a breakfast recipe which i got to know after comming to U.S.Just love them now.I was just going thro'various sites of recipes and in some site i found a easy recipe of pancake where in no eggs where used.This is very simple and a bit healthier too.

Ingredients:-
-----------
All purpose flour - 1 cup
Baking soda - 2 tsp
sugar - 2 tbsp
salt - pinch of salt.
water -1/2 cup
milk - 1 cup
Butter - 1 tbsp
Vanilla extract - 1 tsp



Method:-
-------
1.Mix melted butter,sugar salt and pinch of cinnamon and nutmeg powder[Optional].
2.To the above add flour and baking soad .Then slowlly add milk and water and wisk roughtly to for a batter.do not over mix it.
3.Keep aside to set the batter for about 15-20 mins.
4.Then pour a laddle full of batter to a nonstick pan to form a small circle.
5.slowly flip to other side when the bubbles starts to for on the top surface .Cook on both sides till they turn golden brown.
Serve hot topped with the small piece of butter ,drizzle some maple syrup or honey and powdered sugar sprinkled over the top.I have used honey, as its better and good for health. Enjoy hot with hot chocolate ....

Jatpatt Spinach rotti



Here is a simplest recipe of yummy palak rotti .As usual i was chatting with my mom and she said that she had prepared this rotti and the way she described it i felt like eating it very badly.She had prepared it out of 'basale' that is the chineese spinach.But as we get it very rarely over here in California i thought of trying it out with the spinach and believe me it came out so good and tasted,simply very good .It is crunchy as well as silky smootn because of the spinach.Its very heathy as there is the spinach which is rich in iron , vitamin-B & Vit-A.The base is wheat flour which is rich in fibres , protien & vit-B .Well all may feel that its like parata ,but no friends its not like that and taste is so promising indeed.Do give a look at the pictures and then try.See it for yourself.

Ingredients:
-----------
Wheat flour- 2 cups
Spinach - 1 bunch
Chilly powder- 2 tsp
Salt- 1 tsp
Jeera-1 tsp
Turmeric powder- 1 pinch
water


Method:
-------
1.Take the flour and salt in a big vessel and mix.Then add thinly chopped spinach to it.
2.season with chilly powder,salt ,turmeric and jeera .
3.Add enough water to make a wet dough just enough to roll out the balls roughly.It will be very stick .,
4.Heat the pan ,then make a big ball out of this wet dough and flaten it a bit and place it in the centre of the pan and press and make a small round shaped rotti out of it.Dip your hand in cold water after each rotti so that your hand wont get burnt.
5.Cover and cook for 1 min .Then smear the upper surface with coconut oil then flip up the opposite side and then smear this side and roast till it turns crisp.This can be eaten as it is or with spicy pickle added at the side.Enjoy...

Rice Breakfast round up

Here are the simple recipes for a tasty and healthy btreakfast .One recipe and various different presentation and taste too...I bet you will love it ...just like me.Myself and N are not ones with sweet tooth.But this is a thing what we both loved .Its so soft tasty and smells great. Just try this and fall in love with it.Thats all i wanna say....





Ingredients:
----------
Rice - 3cups
Coconut - 1/2 cup
water -7 cups
Salt - as per taste

Method:-
--------
1.Soak the rice in warm water for a couple of hours .
2.Add the water used for soaking along with the rice to a blender and grind it to almost nice paste to the size of small rava or just like what we do for idli.Add the coconut grates at the end and turn for 30 secs.
3.Now add enough salt and the water mentioned above into a heavy bottomed pan.Then add the batter of rice and coconut to it and keep stirring.Let the burner be in medium only because the rice batter cooks very quickly.Keep stirring right from the bottom.The lumps will form dont worry keep mashing them and do not stop stirring.
4.This will take about 8-10 mins.Wait till all the mixture forms a single mass and the consistancy should be enough to roll out into small balls.Then remove from the heat .

This is the Basic dough for all the up comming dishes.


Rice dumplings / Pundi/akki unde:-
-----------------------------


1.Keep a bowl of cold water with few ice cubes next to you.
2.Roll out the cooked rice mixture into small balls .Hands will get hot so frequenty dip your hands in cold water.This will help your hands from getting too hot and will also help to form a nice smooth pundi.
3.Now cook or steam the pundi's in the cooker just like idli for 10-15 mins.Thens erve with hot curry out of spinach ,redleaves and black eye bean curry{bendi}.hmm just love it .
Can enjoy it with spicy chutny or just oil and pickle...



Sweet undde:-
-----------
This is also called modaka in some place .We genarally prepare it during chowthi also..Well for me i prepare it whenever i crave for it.



Other than the comman cooked rice mixture we require following also:
----------------------------------------------------------
1/2 cup -coconut grates
3 tbsp - jaggery/ sugar[ i have used jaggery]
1/4 tsp - cardammom powder


Method;
--------
-Mix all the ingredients together
-MAke a small ball out of teh rice mixture .
-Then press and flatten it andthen stuff the coconut jaggery stuffing to it about a spoon full and then cover the edges just like what we do for parata and make a ball again
-Steam cook again in the same way as pundi for 10-15 mins.
-Enjoy when hot or cooled properly any time they taste supperb.

Hallitu payasa:-
------------

Same cooked rice dough can be used.




Ingredients:
----------
10-14- small cooked rice dumplings
4 ounces- milk
4 ounces-coconut milk
4 ounces-water
Jaggery -as per your taste
1/4 tsp- cardammom powder


Method:-
-------
-Make small balls or thin cylindrical threads by rolling in between your hands or like chakkuli, out of the same dough and then steam cook it for 10 mins.
-Then take a vessel add water, jaggery, cardammom powder to it and finallywhen the jaggery melts add coconut milk,milk and then the rice balls or the small thin cylindrical treads into this mixture and bring to a boil.
-Serve hot or cool and serve like kheer.Tastes yummy...

Vegetable Uttappam



There are various variety of dosa But this one is easy and just filling with a wonderful taste.The best part about this recipe is with one single batter you can prepare thuppa dosa,uttapa,set dosa ,masala dosa,dodna and many more.Prepare the basic batter then enjoy the whole week.I just love this dosa as its soft,spongy with roasted vegetable of your choice.This has got a beautiful look and is really apealing.I call it indian pizza....That way kids also will like to give a try .

Ingredients:
----------
Rice - 2cups
Urad dal -1/2 cup
Poha - 1/2 cup
methi seeds - 1 tsp
Salt
Carrot grates- 1/2 cup
Onion - 1/2 cup
Green chillies-2
Coriander leaves-3 tsp


Method:-
--------
1.Soak rice,methi seeds and urad dal in warm water for about a couple of hours.
2.Then grind these with salt and poha to form a smooth paste.
3.If its cold out then add yeast dissolved in warm water for 5 mins[setting]
4.Keep in warm place so as it rises to double the size.Or over night for even better results.
5.Then mix properly and pour enough batter in a hot pan and make a round dosa and sprikle with grated carrot,chillies and onion .Then little bit of chopped coriander leaves [You can also add ginger and chopped capsicum,beetroot any vegetable of your choice]
6.Cover and allow it to cook for 2-3 mins then remove the lid,smear oil ans filp it to other side and smear this side with oil or ghee and wait for 1 min so that the top layer of dosa is roasted well.Then remove and serve with freshly made chutney or just like that.

Banana Dosa



I always have a problem thinking what to prepare for the breakfast.So yesterday thought of preparing something out of my fellow bloggers so was just going thro' the blogs and suddenly remembered Seema's Banana dosa which i always wanted to prepare.Well i had good ripe banan's also so thought will give a try.Thanks a lot my dear sis {Seema} for sharing this wonderful recipe.I have changed the proportions and added some extra ingredients but these dosas is mind blowing.'N' loved it so much he asked for the dosa even in the afternoon....

Ingredients:
----------
Rice- 2 cups
beaten rice-1/2 cup[for softness]
methi seeds-1 tsp
bananas-3 ripe
salt- 2 tsp



Method:-
--------
1.Soak the rice and methi seeds in warm water for atleast 2-3 hrs.
2.Mash well ripen banan's and put it in the blender and add soaked rice and methi seeds,blend into a fine paste adding enough water.
3.Remove it into a vessel add salt and keep it in a warm place so that the batter can undergo fermentation and rise up to give a fluffy dosa.Keep it over night.
4.Stir properly and add salt as per taste,then pour into a well heated pan to for a good round dosa.
5.Apply ghee and revert and apply ghee on the opposite side.Serve hot with spicy chutney at the side.I have served with simple curry leaqf chilly chutney.Enjoy...

Tomato Omblet


Dosas are of various type.Some Which can be prepared instantaneously and others need a bit of prior preparations.Well today i will be posting a simple recipe which can be prepared instantly. this is a jut-pat delicious dosa which one can prepare in no time.I must confess friends it tastes so good that you just can gobble up 3-4 at a strech.It a simple crisp colorful dosa which has the crunch and roasted veggies going on in it.Its a best morning light breakfast for all of us,healthy and yummy .

Ingredients:
----------
Rava - 1cup
All purpose flour -1 cup
Salt -1 tsp
Chilly powder -1/2 tsp
Turmeric powder - 1pinch
green chillies -2 large
Ginger grates -1 tsp
Onion -1 medium sized
tomato -1 large
curry leaves -5-6
Cumin -1 tsp



Ingredients:
-----------
1.Chop the chillies ,onion,curry leaves and tomato very finely and keep aside.
2.Take a bowl and add flour and rava to it.Then add cumin ,chilly powder,turmeric powder,salt and gingergrates and all the other finely chopped veggies to it ,add enough amount of water and keep aside to set for about 10 mins.
3.Take a pan and heat it in medium and when hot take about a spoon full of thin batter in it and gently splash it over the pan so as to form a thin dosa just like rice dosa[Neeru dosa] what i have mentioned already in my older posts, cover and let it cook for 10 sec .
4.Add about 1/2 tsp of butter/oil and then toss it upside down and roast it on the top side for about 30sec.
5.Serve hot with ginger chutny at teh side.Nothing else be a bettr start for the day.Enjoy....

Neeru dosa [simple rice dosa]


This is a famous recipe inspired from south Indian kitchen.This is a very easy and a tasty simple recipe which can be prepared instantaneously.My hubby always loves to have this at any time of the day and always asks me to prepare this dosa when ever i ask him what he would like to have.Its osft ,nice to look as its pure white in colourand tasty to eat with chutney,or any gassi,sambar or even with curds and pickles in the side.Believe it i can bet you all will fall in love with this recipe of mine.

Ingredients:
___________
Rice -2 cups[sona masoori]
Salt -as per taste
Oil or ghee -for roasting
Water


Method:
-------
1.Soak the rice in warm water for about an hour
2.Then grind it to make a fine paste adding enough water.Make a thin batter out of it
3.Make it so thin that you can splash it into your tava just like rava dosa.
4.Add salt to the batter mix properly and then take a spoon full and splash it into your tava to form a dosa
5.Then cover it with the lid for about 30-45 secs.just when it leaves its edges smear some ghee or oil them remove and bake upside down and allow it to bake for about 40secs.then serve hot with chutney or sambar or anything you wish.Can be served with coconut grates mixed with jaggery also.Enjoy

Fluffy Poori



This is a good recipe which even the kids will love to have at any time.It can be eaten just as it is or with any side dishes.Most of them love it with ksheera in southIndia and some like it with spicy chole in northen part of India.

Ingredients:
__________
Wheat flour -2 cups
Maida - 1cup
Salt -1.5 tsp
Curds - 1 cup
Cumin - 1 tsp
Turmeric powder-1/2 tsp
Oil - for deep fry



Method:
_________
1.Take a large bowl ,add salt and 1 tsp of oil ,add all the flours and curds to it .
2.Add cumin and mix all the ingredients with enough water.
3.Adding curds to poories makes it soft and prevents it from absorbing oil.This way even the poories remain fluffy.
4.Even the oil does'nt get black.
5.Now roll out small ball out of the dough and then roll out small chapathi out of it.The only thing to be kept in mind is the poories should not be rolled too thin like chapathi's as it does not bloat up thoroughly when you fry them.
6.Now take oil in a pan and heat it properly and then fry up these poories.
7.Serve hot with bhaji or chole.
8.Actually anything in sides is ok for poories.Enjoy it the way you like.

Rava Idli



Here is a easy tasty recipe for the breakfast.This is delicious and even healthy at the same time.you could prepare it instantly.
Its best on a cold day to enjoy with a plat full of hot idle and sambar.


Ingredients:
___________
Idly rava -2 cups
Urad dal -1 cup
Beaten rice - 1 cup
Cashews - 2 tsp
Coriander - 3 tsp
Mustard -1 tsp
Dried chilly -2 broken
Oil -1 tsp

Method:
________
1. Soak urad dal for 1 hr in hot water.
2.Blend it with beaten rice adding little water.
3.Add idle rava and enough water to for a thick dough.Add enough salt to it.
4.Mix little yeast with warm water for 5 mins and then mix with the dough.
5.Now keep this covered with a lid for 1 hr in a warm place to allow it to rise to double.
6.Then take 1 tsp of oil in a pan add mustards and chilly to it and allow it to splutter.Then mix it to the dough.
7.Smear the idly cups witnlittle oil or wet it with water .This will prevent it from sticking to the surface and help in easy clean up.
8.Pour the batter and bake like idle in pressure cooker.
9.Enjoy with hot sambar made up of potatoes and onions.

Poha



Here is a instant dish for the breakfast.Quick and tasty.

Ingredients:

Beaten rice - 2 cups
Onion - 1/2 cup
Green chilies -2 finely chopped
peas -1/4 cup
Cury leaves - 4-5
Coconut - 3 tsp
tomato - 1 small
Peanuts - 2 tsp [roasted]
Chilly powder-1 tsp
Turmeric powder-1/2 tsp
Potato -1/2 cup boiled and mashed
salt
Oil - 2tsp
Mustard - 1tsp
Dry chillies -2
Cumin - 1 tsp

1.Take a pan add 2 tsp of oil,add mustard and cumin .just when it splutters add onions ,peanuts and saute till it turns slightly brown.
2.Now add all the masalas,green chillies,peas and potato.add enough salt.
3.Now soak the thick beaten rice in water and strain and add them to the pan and mix well.
4.Add the coconut grates and saute properly.
5.Serve hot with a cup of coffee
