Masala Dosa



This is a tasty recipe made out of rice with urad dal mainly with the potato bhaji stuffed in with a dry garlic chutney rubbed into the inner layer of dosa just before the bhaji stuffing,Yummy....I just cant wait to eat it.........hmm...

Ingredients:

Raw rice - 2 cups
Urad dal - 1 cup
Masoor dal - 2 tsp
Orange masoor dal -2 tsp
channa dal -2 tsp
Methi seeds - 1 tsp
salt -as per taste
yeast - 1/2 tsp dissolved in warm water

--> These are for the batter which have to be soaked in hot water for 3 hrs.

Bhaji ingredients:

Potaoes - 2 large
Onion -1 large
Green chillies - 2 large
Ginger - 1 tsp chopped finely
Curry leaves - 6
red chililes - 2
Mustard - 1 tsp
urad dal - 1 /2 tsp
oil - 2 tsp
Turmeric powder- 3/4 tsp
Chilly powder - 3/4 tsp
salt - as per taste.

Method:

1.Blend all the ingredients of batter till it forms a smooth paste by aadding enough water and salt .
2.Now add the yeast and keep it in a warm place to raise up over night or for 3-5 hrs atleast.
3.Now the batter is ready.Heat the pan /tava and then pour about 2 big spoon and roll it in circular fashion in the same direction and close the lid and allow it to cook for about 3 min .
4.Then greese it with ghee and slowly make it upside down and now bake it without a lid for 1 min .Then again revert it and greese it with dry garlic chutney and put 1 big spoon of bhaji in one side of the dosa and close it from othe side.




Bhaji:

1.Bake the potatoes and mash them after adding a little salt.
2.In a pan add some oil and put mustard , redchillies , curry leaves and urad dal.Allow it to splutter.
3.Now add onions and saute them till they become traansparent.
4.Add the mashed potaoes,green chilles,ginger, turmeric and chilly powder.Add about 1/2 cup of water and mix properly.
5.Then cook by reducing the heat for about 10 mins.The bhaji is ready to hide in your dosa.



These can be serves with freshly fried puries or chapatti also.
