Spongy Pan-cakes[No eggs]

Pancakes is a breakfast recipe which i got to know after comming to U.S.Just love them now.I was just going thro'various sites of recipes and in some site i found a easy recipe of pancake where in no eggs where used. This is very simple and a bit healthier too.

Ingredients:-
-----------
All purpose flour - 1 cup
Baking soda - 2 tsp
sugar - 2 tbsp
salt - pinch of salt.
water -1/2 cup
milk - 1 cup
Butter - 1 tbsp
Vanilla extract - 1 tsp

Method:-
-------
1.Mix melted butter, sugar salt and pinch of cinnamon and nutmeg powder[Optional].
2.To the above add flour and baking soad .Then slowlly add milk and water and wisk roughtly to for a batter.do not over mix it.
3.Keep aside to set the batter for about 15-20 mins.
4.Then pour a laddle full of batter to a nonstick pan to form a small circle.
5.slowly flip to other side when the bubbles starts to for on the top surface .Cook on both sides till they turn golden brown.
Serve hot topped with the small piece of butter ,drizzle some maple syrup or honey and powdered sugar sprinkled over the top.I have used honey, as its better and good for health. Enjoy hot with hot chocolate ....

what do we do with the vanilla extract??

Instead of butter and sugar, try adding over-ripe mashed banana. That way its even more healthy. :-)

Hi Vinita,
The vanilla extract should be added to the batter with water and milk.Sorry i missed it out.

But how does it rise? Doesn't baking soda need something acidic (buttermilk or vinegar or lemon juice ) to rise? Will it work with baking powder instead of baking soda?
