Vegetable stew



Now a days its getting cooler and cooler out.So i always like to have a big cup of hot soup and cover myself with a nice blanket, just sit in front of tv and watch and watch my favorites shows.What else can give a coasy homely feeling in the season of cold winters.I always like to try out some new flavours in my soups.So i thought of trying a stew.Im am a soup lover and like to have more and always end up filling myself with only soup ,this made me prepare a stew which is filling and hot as i like them to be.Its quite nutritious with all the vegetables added to it.Here is a filling hot spicy stew recipe for all of you.

Ingredients;

carrots- 1 cup
celery -1/2 cup
tomato -1 cup
tomato puree-1/2 cup
jalapeno-2 large
sweet corn -1/2 cup
beans-1/2 cup
capsicum-1/2 cup
onions-1 cup
Broccoli-1/2 cup
ginger garlic patse-1 tsp
pepper powder-1 tsp
paprika -1/2 tsp
coriander powder-1/2 tsp
cumin-1 tsp
Bay leaf-1 large dried
vegetable stock-1 cup
water -1 cup
celery leaves- 3 tsp
olive oil- 2tsp
salt-as per taste
italian seasoning-1 tsp


Method;
--------
1.Take a heavy bottomed pan add 2 tsp of olive oil,add cumin and allow it to splutter.
2. Add onions and saute them for about 2 mins ,then add ginger garlic paste and fry till brown, to this add carrots,and celery and saute it for 2-3 mins.
3.Then add diced tomatoes ,tomato puree and season with salt, pepper,coriander powder,paprika ,bay leaf and mix properly.
4.then add corn kernnels and remaining vegetables and add vegetable broth and close the lid and allow it to cook in medium heat for about 15 mins.
5.Later add water and see for the salt and spices and then cook on high for 5-8 mins.
6.Serve hot with bread toast at the side .Enjoy the cool winter with a large bowl of stew.

What kind of beans would I use? I left them out.
