Banana Payasam


There are totally 6 varities of tastes and sweet is one among them.Well i aways like to have spicy things along with that like sweets as a second option.There are some perticular sweets which i like to have.Banana payasam in one among those.Banana is a healthy fruit ,easily avilable and very cheap indeed.This is a perticular varity of fruit which is available through out the year and we need not wait for the season.It can be eaten raw by preparing wonderful curries and riped banan's are simple devine when added to any sweetdishes it enhances the flavour and gives a peculiar varity of richness.
I had some guests comming over to my house this weekend and had no time to prepare sweet.I saw some riped banana's in my counter top so thought of preparing something out of them.As it hardly takes 15 minutes to prepare this sweet dish and the ingredients required is also so simple andminimali prepared itIt came out so good that all of my guest loved it and wrotedown the recipe.We all had fun and the speciality is nobody could make out it was prepared out of banana.

Ingredients:
----------
Well ripe banana's- 2 large
Milk - 2 cups
water -1/2 cup
Jaggery -1/2 cup[powdered]
Cardammom -1/2 tsp
saffron -2 piches
Butter -3 tsp


Method:
-------
1.Mash the riped banana's with hand so as to form a rough paste.
2.Take a pan add 2 tsp of butter to it and allow it to melt.Then add the banana paste to it and fry till it turns slighty brown.
3.Then add jaggery to it and keep mixing properly when all the jaggery is properly incorporated ,add milk and water to it and simmer and allow it to cook for 5 mins
4.Take 1 tsp of butter in a bowl and add1 tsp each of scliced almounds,cashews and raisins to it and roast it in microwave.
5.Now add the saffron to the payasam and bring to a boil.then add cardammom powder and butter roasted dry fruits to it and mix properly and bring to aboil and allow it to enhance the flavour by increasing the heat and cooking for another 4 mins.
6.Serve hot or cold as kheer as per your likings.

Vegetable stew



Now a days its getting cooler and cooler out.So i always like to have a big cup of hot soup and cover myself with a nice blanket, just sit in front of tv and watch and watch my favorites shows.What else can give a coasy homely feeling in the season of cold winters.I always like to try out some new flavours in my soups.So i thought of trying a stew.Im am a soup lover and like to have more and always end up filling myself with only soup ,this made me prepare a stew which is filling and hot as i like them to be.Its quite nutritious with all the vegetables added to it.Here is a filling hot spicy stew recipe for all of you.

Ingredients;
-----------
carrots- 1 cup
celery -1/2 cup
tomato -1 cup
tomato puree-1/2 cup
jalapeno-2 large
sweet corn -1/2 cup
beans-1/2 cup
capsicum-1/2 cup
onions-1 cup
Broccoli-1/2 cup
ginger garlic patse-1 tsp
pepper powder-1 tsp
paprika -1/2 tsp
coriander powder-1/2 tsp
cumin-1 tsp
Bay leaf-1 large dried
vegetable stock-1 cup
water -1 cup
celery leaves- 3 tsp
olive oil- 2tsp
salt-as per taste
italian seasoning-1 tsp


Method;
--------
1.Take a heavy bottomed pan add 2 tsp of olive oil,add cumin and allow it to splutter.
2. Add onions and saute them for about 2 mins ,then add ginger garlic paste and fry till brown, to this add carrots,and celery and saute it for 2-3 mins.
3.Then add diced tomatoes ,tomato puree and season with salt, pepper,coriander powder,paprika ,bay leaf and mix properly.
4.then add corn kernnels and remaining vegetables and add vegetable broth and close the lid and allow it to cook in medium heat for about 15 mins.
5.Later add water and see for the salt and spices and then cook on high for 5-8 mins.
6.Serve hot with bread toast at the side .Enjoy the cool winter with a large bowl of stew.

Tomato Omblet


Dosas are of various type.Some Which can be prepared instantaneously and others need a bit of prior preparations.Well today i will be posting a simple recipe which can be prepared instantly. this is a jut-pat delicious dosa which one can prepare in no time.I must confess friends it tastes so good that you just can gobble up 3-4 at a strech.It a simple crisp colorful dosa which has the crunch and roasted veggies going on in it.Its a best morning light breakfast for all of us,healthy and yummy .

Ingredients:
----------
Rava - 1cup
All purpose flour -1 cup
Salt -1 tsp
Chilly powder -1/2 tsp
Turmeric powder - 1pinch
green chillies -2 large
Ginger grates -1 tsp
Onion -1 medium sized
tomato -1 large
curry leaves -5-6
Cumin -1 tsp



Ingredients:
-----------
1.Chop the chillies ,onion,curry leaves and tomato very finely and keep aside.
2.Take a bowl and add flour and rava to it.Then add cumin ,chilly powder,turmeric powder,salt and gingergrates and all the other finely chopped veggies to it ,add enough amount of water and keep aside to set for about 10 mins.
3.Take a pan and heat it in medium and when hot take about a spoon full of thin batter in it and gently splash it over the pan so as to form a thin dosa just like rice dosa[Neeru dosa] what i have mentioned already in my older posts, cover and let it cook for 10 sec .
4.Add about 1/2 tsp of butter/oil and then toss it upside down and roast it on the top side for about 30sec.
5.Serve hot with ginger chutny at teh side.Nothing else be a bettr start for the day.Enjoy....

Sweet potato soup



Soups are the best dish to serve in this cool winter.This helps to keep onself warm and also is a easy way of serving a dilicious appitizer.This is a rich and creamy soup prepared out of sweet potato.Sweet potato is a very nutritive vegetable and is very easy to store. Just like potato can be store for days together.Its easily available in all the places .

Ingredients:
___________
Sweet potato - 1 medium size
Green chillies - 2 fresh
Milk - 2 tbsp
Macaroni - 3 tsp
water - 2 cups
Salt - 1 tsp
Pepper - 1/2 tsp
Onion powder - 1 tsp
Garlic powder - 1 tsp
Ginger grates - 1/2 tsp
Italian seasoning- 1/2 tsp

Method:
-------
1.Wash ,peal and chop up the sweet potato and cook them till soft with pinch of salt and turmeric powder.
2.Blend together sweet potatoes,green chillies.ginger and milk so as to form smooth paste .
3.Now take a vessel add the puree and bring to aboil and then add garlic and onion powder,pepper powder and simmer and cook for 5 mins.
4.Mean while cook the macaroni in water and drain them and add it to the soup and then add the italian seasoning and bring to a boil adding enough amount of salt.
5.Finally add chopped cilantro[coriander leaves] and serve with some bread rolls at the side.

Radish salad/mooli salli



Here is a simple and very quick recipe for sides or even can be used as main course.Raddish is a very comman vegetable which you get almost throughout the year and remain fresh for many days.Easy to store too...so here is a recipe which i'm gonna write up .I liked it a lots when i had it in a hotel for the first time and wondered how did they remove the dirty smell of raddish because of which i use to avoid buying it.Its the best vegetable suitable for winter mainly as it keeps the body warm and very helpful in cold and cough.Believe me friends it simply tastes so good that, i just ended up eating only this.You even can't makeout its radish and that too raw????....so lets get started.

Ingredients:
----------
White raddish- 1 large
Green chillies- 2 large fresh
Cilantro - 3 tsp
Coconut grates- 3 tsp
Lime juice - 3tsp
Veniger - 1 tsp
Salt -3/4 tsp


Method:
________
1.Wash and peal the skin of the raddish and cut them into 4 pieces lenthwise, then slice them thinly and keep aside
2.Chop up all the chillies very finely and add it to the sliced raddish
3.Add vineger and lemon juice to the raddish bowl season with salt and allow it to absorb for about30 mins .Then add chopped cilantro and fresh coconut grates and nicely saute it.
4.This is ready to be served.Enjoy.

Spicy ridgegaurd pancakes



This is one of therecipe which i like.As i had said friend s i will be comming up with differnt recipes out of ridge gaurd here i am with one more tasty recipe which can be eaten just as a snack,breakfast or sides with the rice.This is a spicy,crunchy chewy recipe which is quite appealing too.

Ingredients:
----------
ridge gaurd - 1 large thinly scliced
Rice - 1 cup soaked in water
Dry chillies - 7-8
Coriander - 3 tsp
Hing - 3 pinch
Turmeric powder- 1/2 tsp
Methi seeds - 1/4 tsp
Cumin - 1/2 tsp
Tur dal - 3 tsp
tamarind pulp-1/4 tsp
salt


Method:
-------
1.Soak raw rice and tur dal in warm water for atleast 1 hr.
2.Grind chillies hing,turmeric,tamarind,coriander seeds,methi seedswith the soaked rice and dal to a rough thick paste. Add salt to it as per taste and mix properly.
3.Slice up the ridge gaurd into thin slices and dip it in the batter and plcae one in the centre of the hot pan then surround it with similar 5 slices,so that it will form a flower like in appearence.Then cover all the area's in between the slices with the batter.
4.Close and cook for some time then smear with oil and bake it up side down. till both the sides becomes crunchy and cooked well.
5.Serve hot with rice as sides or with coconut chutny for breakfast /simply cut into 4 quarters and serve with tea as snacks. enjoy.

Tomato soup


As these days its pretty cold out ,i always try to prepare something hot to keep ourself warm.Ialways like spicy and hot dishes sothing like soups and hot rasams.So today i would like to share one such recipe of creamy soup with you.Tomato soup is one of my altime favorites.I like to have it with crunchy chips at the side or butter roasted bread bits dipped in it with 1/2 spoon of butter at the centre.This is the simplest soup what one can prepare but yet it tastes the best among all the soups.The lovely bright red colour and the sweetish sour taste of the tomato compliment with the spicy pepper added to it.

Ingredients:
__________
tomato puree- 2cups
water - 2 cup
Pepper - 1tsp
Salt - 1 tsp
corn starch - 1/2 tsp
garlic powder - 1/2 tsp
onion powder -1/2 tsp
basil powder - 1/2 tsp[optional]

Method:
-------
1.Take about 2-3 well riped tomatoes and pure it ito nice paste or even the store bought one small tin of tomatoe puree can be used.
2.Take a pan add 1/2 tsp of butter and allow it to melt,then add the puree to it and allow it to boil saute it occasionally.
3.Now when it boils add2 cups of water ,season it with salt and pepper.Then add onion and gralic powder and bring to a boil.
then add corn starch dissoleved in cold water and add it to hot soup slowly lowering the heat amd wisking continously.
4.Now if you dont have onin and garlic powder then chopp iboth about 1 tsp, lenthwise and thinly, then fry it in butter till it turns out crunchy and dark brown and add it to soup at the end and just heat it.it will taste even better.
5.Then at the end add add basil and serve hot with a small piece of butter served at the top and crispy chips in the sides.

Besan vanilla bites



This is a recipe, which i was inspired by saffron hut.Well just a week before we had lots of jalebi's in our house.Normally me and my hubby dont like sweets so much.But we both love jalebi's a lot. Those chrunchy,sweet juicy jalebi's are my altime favorite.So we ate up all of them and got eddicted to sweets.So i wanted to prepare some easy recipe which had very little fat in it.So thought of preparing this dish out of besan which i has a lot stocked up in my pantry.Believe me friends i must confess it came out that good that i just melts within no minute in your mouth .hmm...nothing much but cant help saying kya kare control nahi hota.....so here i'm sharing this recipe with you all.

Ingredients:
____________
Besan[chick peas powder]- 1 cup
Sugar - 1 cup
Cardammon - 1/2 tsp
Milk - 2 tbsp
butter - 3 tsp
almonds - 6 sliced finely
Vanilla extract - 1 tsp

Method:
_________
1.Take a heavy bottom pan and melt the butter.
2.Then roast the besan powder under very low heat till all the raw smell goes off and it turns to bright golden colour.
3.Now add sugar and mix properly then add milk and continue to saute.
4.Just when the mixture starts to bubble up add 1 tsp of vanilla extractand cardammon
5.Remove it from the fire just when the mixture starts leaving the edges and forms a single mass when the pan is kept slant.6.At this point remove it and pour into a tray which must be greased with butter.Allow it to cool fully and then cut it into small squares.This can be preserved for atleast a month but believe me you will finish it before that.

spicy carrot cabbage masala



This is a tasty recipe out of the combination of the vegetables.There are certain vegetables which everyone can stock up in the fridge for a long periods.Then lasts fresh for days together.Cabbage and carrot are 2 among them.So i thought of preparing some dish out of it as i had only these type of vegetables left over in my refrigerator.Believe me friends this has turned out so good that i thought of sharing it with you.So here i am with this wonderful combination dish.

Ingredients:
----------
Cabbage - 1 cup
carrot - 1 cup
capsicum - 1/2 cup
Onion -1 cup
Onion puree -1/2 cup
Tomato puree -1 cup
Ginger garlic paste-1 tsp
Green chillies - 1 large
Chilly powder -1/2 tsp
Paprika powder-1 tsp
Pepper powder -1/2 tsp
Turmeric powder -1/2 tsp
Kitchen king masala-1/2 tsp
Oil -2 tsp
Milk -1/2 cup
water -1 cup
peanuts/cashews soaked in milk-2 tsp
cumin -1 tsp
salt -1.5 tsp

Method:
_________
1.Make puree out of ginger garlic,onion and tomatoes and cashews and keep aside.
2.Take oil in a pan add cumin to it and then add onions when it splutters.Fry till it turns transparent.
3.Then add the puree and saute till all the raw smell goes of say for about 5-8 mins.Then add milk and saute for about 3 mins.Add all the masala for seasoning and then add salt and mix properly.
4.Then adda grated carrots , finely chopped cabbage and thinly sliced capsicum.
5.Cook with water added and lid closed for 8 mins.
6.Serve hot with chapathis or curd rice.

Capsicum Raitha



Raitha's are the most commenest dishes prepared in our places.They can be prepared out of any vegtables according to me.So here i have come up with a different kind of raitha.Its very crunchy and creamy at the same time.Looks great with the gorgeous colours of the fresh capsicum and tastes better because of the richness of peanuts and cococnut added to it.Well this is really a new creation Of mine and my family liked it a lot.

Ingredients:
___________
Red Capsicum - 3/4 cup
green capsicum- 3/4 cup
Coconut grates - 2 tsp
Green chillies - 2 large
Curds [thick] - 1 cup
Cashews - 2 large /whole
Cumin -1 tsp
Butter - 1 tsp
Pepper - 1/2 tsp

Method:
_________
1.Chop up the capsicum into small squares .
2.Melt about a spoon full of butter in a pan add add cumin and wait till it splutters.
3.Then add the dices capsicum and season it with salt and pepper and allow it to get crispy.allow it to become black at the edges then remove it and keep it seperate.
4.Add coconut,green chillies and peanut and make a paste of it aand keep it aside.Beat up the thick curds a little bit season with salt and pinch of cumin and pepper ,then keep aside.
5.Just before serving mix all together and serve fresh.This keeps the capsicum fresh and crunchy.
6.Enjoy with rice or any parata's.

Vegetable khurma



This is a spicy recipe which i prepare which is my hubby's all time favorite.This can be prepared will all little left off vegetables .All little left of vegetables is really a headache for most of us .So here is a very nice recipe to prepare with all types of left back veggies.

Ingredients:

Carrot- 1 large
Potato- 1 large
Tomato-1 large
Onion - 1/2 large
Peas - 1 cup
Cauliflower- 1cup
coriander leaves- 1/2 bunch
Garlic - 2-3 pearl
Pepper corns-4-5
Cloves -4
cinnamon - 1/2 stick
Green chillies -2 large
Chilly powder- 1/2 tsp
Kitchen king masala-1/2 tsp
Salt as per taste
Oil-1 tsp
jaggery-1/2 tsp[optional]
Cumin-1 tsp

Method:
________
1.Cook chopped carrots,potatoes in microwave for 4 mins and keep aside.
2.Take oil in a pan add cumin and wait till it splutters and add onions and fry till they turn transparent.
3.Take garlic,coriander,pepper,cloves,green chillies and cinnamon and make a paste out of it using enough water.
4.Now add chopped tomatoes to the onions.fry them till they turn soft .
5.Then add carrots,potaoes and add the peas and add the paste and little water.Bring it to a boil and them add salt ,chilly powder,jaggeryand kitchen king masala.Bring it to a boil and simmer and allowit to cook for 10 mins
6.Serve hot with plain rice ,hot poori's or simple chapathiand enjoy.

Neeru dosa [simple rice dosa]


This is a famous recipe inspired from south Indian kitchen.This is a very easy and a tasty simple recipe which can be prepared instantaneously.My hubby always loves to have this at any time of the day and always asks me to prepare this dosa when ever i ask him what he would like to have.Its osft ,nice to look as its pure white in colourand tasty to eat with chutney,or any gassi,sambar or even with curds and pickles in the side.Believe it i can bet you all will fall in love with this recipe of mine.

Ingredients:
___________
Rice -2 cups[sona masoori]
Salt -as per taste
Oil or ghee -for roasting
Water


Method:
-------
1.Soak the rice in warm water for about an hour
2.Then grind it to make a fine paste adding enough water.Make a thin batter out of it
3.Make it so thin that you can splash it into your tava just like rava dosa.
4.Add salt to the batter mix properly and then take a spoon full and splash it into your tava to form a dosa
5.Then cover it with the lid for about 30-45 secs.just when it leaves its edges smear some ghee or oil them remove and bake upside down and allow it to bake for about 40secs.then serve hot with chutney or sambar or anything you wish.Can be served with coconut grates mixed with jaggery also.Enjoy

Ridge gaurd dal makhani



This is a delicious healthy recipe .Quick and easy to prepare and a realt treat to the tastebuds and stomach.This is vegetable which people try to avoid most of the time.But i will be comming up with many different flavoured recipes out of this single vegetable.This is one among them.

Ingredients:

Tuvar dal - 1 cup
Ridge gaurd - 1 large
Mustard - 1 tsp
Chilly powder -1/2 tsp
Turmeric powder -1/2 tsp
Salt -1.5 tsp
Green chillies -2
cumin -1 tsp
Pepper corn -1/2 tsp
Ghee -1 tsp
Hing -2 pinch
Lemon juice - 1/2 tsp
Dry chillies - 2
Urad dal -1/2 tsp
Curry leaves - 5-6


Method:
_________
1.Pressure cook the dal with enough water and drop of oil,chilly powder,turmeric powder and salt and keep aside.
2.Chop the ridge gaurd into tiny chunks,add little water to it and cook them with little salt ,chilly powder for about 6-8 mins
3.To the cooked vegetable add the cooked dal ,green chillies ,hingand bring to a boil then reduce the heat
4.Take a spoon of ghee to it add mustards ,urad dal,cumin dry chillies and and when it splutters add curry leaves and add it to the curry.add lime juice and bring to a boil.
5.Serve with hot fresh rotis or rice.

Date almound milk shake



Here is a great recipe to bet up the heat and kick up the energy levels for the hot summmer .I love to have this on any day .This is a yummy creamy drink with richness of dates and almounds and creamy ness of milk in it.Its tasty and helps to keep the body warm even in winter.The dates and almound are the 2 dry fruits which are prefered by people who live in cool region.Hence its an all season drink too.Quite filling and even healthy at the same time.It provieds varity of nutrients and vitamins ,iron etc.So can be a complete diet for a fussy kid.

Ingredients:
____________
Dates - 4 large
Almounds-4
Milk freezed-2 cups
Banana-1/2[For extra creaminess[Coolwhip can also be added instead ]
Honey - 1 tsp
Sugar -1 tbsp

Method:
_______
1.Soak the dates in milk for about an hour or cook it with milk in microwave for 40 seconds
2.Then add all teh dates banana,almounds into a blender and add frozen milk ,and blend it to a smooth mixture
3.Then add sugar,honey and give a whip in your blender.
4.Serve in a glass with wafers on the sides.Children will love it believe me.Enjoy when its still very cool.

Sukka Aloo



As the name suggest its a dry dish ,very spicy and a complete blend of all the tastes.Potaoes are the only vegetables which lasts longer,easyly available and has good a good nutritional value also. This is a spicy dish which requires very less time to prepare .Its goes well with poori ,parata or simple rice even.

Ingredeints:
____________
Potatoes - 2 large
LemonJuice -1 tsp
Chilly powder - 1tsp
Kitchen king masala-1 tsp
Turmeric powder - 1/2 tsp
Red chilly paste -1/2 tsp
Coriander powder-1/2 tsp
Cumin seeds -1 tsp
Green onions -3 tsp
Salt - as per taste
Oil -2 tsp
Mustard - 1 tsp
Kasoori methi - 1 tsp

Method:
--------
1.Wash clean and pressure cook the potatoes.
2.Then chop them lenght wise and keep aside.
3.In a large pan take 1 tsp of oil ,add cumin and mustard just when it starts to splutter add red chillu paste,add all the other masala's .then add the chopped potatoes and saute properly and allow it to absorb the flavour by covering the lid.
4.Add 3 tbsp of water to it
5.Then add lemon juice to it,add little bit of oil and kasoori methi,then give a stir .
6.Garnish with fresh green onions and just give a toss and serve hot with roti's or plain rice

Vegetable cutlet



Here is a low fat ,crunchy ,spicy and mouth watering recipe which fits exactly for this windy chilly climate.Its so cold out that one will wish to sit at home with a hot cup of coffee and something spicy and hot sides with it.I feel this one is the best.So lets get started.

Ingredients:

Potatoes - 2 large cooked
Peas - 1 cup
Carrot - 1.5 cup
Beetroot -1/2 cup
Ginger - 1 tsp
Garlic -1 tsp
Pepper - 1 tsp
Onion -1/2 cup
Garam masala- 1tsp
Kitchen king masala-1/2 tsp

1.Soak the bread in milk and keep aside.
2.Cook finely chooped carrots ,onions, beetroot,beans , with peas in microwave without adding water
3.Mash the cooked potatoes properly add all the cooked vegetables ,add ginger and garlic paste. Add cumin to it
4.Add all the seasoning masalas ,salt and mashes soakes bread after removing excess of milk .
5.Mix all the ingredients properly make small balls and flaten them in desired shapes.
6.Then make a paste with water and corn flour, spread the rava in a plate and keep ready.
7.Now coat the paste thinly over the flatened dough then roll it over rava properly so its totally covered without any space left 8.Then bake them in a pan with 2-3 drops of oil on each side till the rava gets roasted to brown and it turns crispy.
9.Serve hot with tomato sauce in the side and hot coffee. enjoy...



You can make 16-18 cutlets with this measurement.

Rich Vegetable soup



I feel soups are really the best part of a meal or a dinner for this cool winter .It not only makes some space for your up comming dishes but is also healthy .Here is a rich and healthy soup which not only looks great but tastes yummy.Believe me friends its a real treat.

Ingredients:

Tomato -1
Onion -1
Carrot -2
Zukini -1
Beans -1/2 cup
Capsicum -1[I have uses 1/2 of 2 different colour
Celery - 2 leaves
Broccoli -1/2 cup
Olive Oil - 2 tsp
Ginger - 1/2 tsp[fresh grates]
Garlic powder- 1 tsp
Basil -1/2 tsp
Italian seasoning-1/2 tsp
Pepper powder-1 tsp
Red chilly flakes-1/2 tsp
Salt -1 tsp[as per taste]
Vegetable broth- 3cups
water - 1 cup

1.Take a pan add oil and the onion and saute them
2.when the onions turns transparent add carrot,celery,zukini ,beans,capsicum, broccoli,then season with salt and pepper and keep tossing them when they turn a bit brown at the edges
3.take a big soup vessel add 1/2 tsp of olive oil to it add vegetable broth,water and basil and italian powder,ginger,garlic powderand allow it to boil.Then add all the vegetables .
4.Close and simmer and cook for 10 mins.then open and season with half spoon of olive oil for the flavour.
5.Serve hot with buttered toast at the side.

Hint:
-Chop all the vegetable in samew size .this helps in same cooking time
-add all the vegetables in same order because its always better to add harder veggeis first so all get evenly cooked
-Just when you cook vegetables 2-3 together add extra water to it and then seperate and filter it and then store in bottles in fridge.even the channa or bean boiled liquid can repalce this vegetable broth.
-If you dont have broth in hand simple water will to add 1 tsp of ghee for the richness and extra flavour.

Aloo Palak



This is a healthy recipe with the creamy spinach in it added with the rich starchy potatoes all blended with a variety of spices in it.Both are very easily avilable vegetables in any of your grocery stores and take very little time to prepare.Its a easy recipe and tastes simply superb.


Ingredients:

Spinach - 1 bunch
Potatoes - 2 large
Onion - 1 large[1 cup puree]
Tomato - 2
Garlic -3 cloves
Ginger - 1 inch piece
Pepper - 1/2 tsp
Garam masala- 1tsp
Chilly powder -1 tsp
Turmeric powder- 1/s tsp
green chillies -2 finely chopped
Milk -1/4 cup
sugar -1/2 tsp[optional]
cumin -1 tsp
Oil - 1 tsp

Method:

1.Wash, clean,chop finely a bunch of spinach
2.Then cook them with little salt and chilly powder for 5 mins untill they turn dark green.Then keep aside. Pressure
cook all the potatoes ,chop them up into snall cubes and keep aside
3.Add onion,garlic,ginger and tomato to a blender and puree them all together.
4.Now take a large pan ,add 1tsp oil and cumin to it.Wait till it splutters.Then add this puree to it and fry till all the raw smell vanishes.
5.Then add turmeric powder ,chilly powder , garam masala,pepper to it.and fry for 3 mins.then add green chillies and then add the spinach to it and add the milk then add potatoes to it and cover and cook for 5 mins.
6.Now open the lid and cook for 5 more mins and then garnish with butter and serve hot with jeera rice or parata's.

Plantain curry



Here is another recipe from the kitchen of South India.It has the spicy taste and wonderful fragrance of the spices blended with it.It has the rich thick gravy because of the banana[raw].

Ingredients:

Raw plantain - 1 large
Garlic -5-6 cloves
chilly powder - 1.5tsp
turmeric powder - 1 tsp
Tamarind - 1/2 tsp
Coriander powder -1/2 tsp
cumin powder - 1/2 tsp
Kitchen king masala-1/2 tsp[optional]
mustard -1tsp
dry chillies - 2 large
cumin - 1/2 tsp
Curry leaves - 5-6
salt - 1 tsp[as per taste]
Jaggery /sugar - 1 tsp
Oil -1 tsp

Method:

1.Chop the raw plantains into 1/2 inch pieces and pressure cook them with 1/2 tsp each of salt,turmeric and chilly powder plus tamarind.
2.Then allow them to cool a bit.Then take half of the cooked plantain and make a course paste out of it.
3.Now add jaggery and remaining masala's and add enough water and bring to aboil and reduce the ehat and allow it to cook properly by simmering.By doing this all the flavours will be properly absorbed by the plantain.
4.Take oil in a pan add mustard,cumin and dry chillies to it when splutters add curry leave s and give a toss and add this to the curry .
5.Then take little oil in the same pan and add chopped pealed garlic and fry till they turn golden brown.
6.Add this also to the mixture.Then stir properly and bring to a boil by increaasing the heat and cook for 5 mins.
7.Serve hot with rice and jack fruit paapad at the side.Believe me friends this will taste awesome.Enjoy...

Banana Blossom stir fry



Here is a typical south In dian recipe which most of you will not be knowing.This is a delicious dish with lots of fibers .I just love it because it has got its own flavour ,smell and the chewy nature.Well all together i just can say that its my favorite dish.




Ingredients:

Banana flower/ blossom - 1 small and tender
coconut grates- 2 tsp
Jaggery -2 tsp
Tamarind -1 tsp
Turmeric powder-1/2 tsp
Chilly powder -1 tsp
Mustard -1 tsp
cumin -1 tsp
Urad dal - 1 tsp
Dry chillies -2 large
Curry leaves -4-5
water - 2 cups
Salt - as per taste

Method:
________
1.Chop up the plantain flower after removing outer 2 layers and small flower buds inside the petals.
2.Then Take a large pan add 1 tsp oil to it and then add cumin ,just when it starts to splutter add the chopped flower.
3 .Add water ,tamarind,chilly and turmeric powder,salt ,jaggery and cook with closed lid on top for about 10 mins.
4.Stir and cook untill tender.Than in a pan add 1 tso oil,urad dal and mustar with chillies.Just when it splutters add curry leaves stir for 1 min and add it to the chopped plantain flowers.
5.Then add 2tsp of coconut grates or more and stir it and heat properly for 3 mins.Then remove it from fire
6.Serve hot with rice and ghee at the top.It tastes goos with curd rice also .Enjoy

Cream of broccoli



This recipe is my all time favorite.Its quite filling and has got the richness and creaminess of milk and the chewy broccholi in it.Its best to keep us warm in this winter.

Ingredients:

Milk - 2 cups
Broccoli - 1 cup
Garlic powder -1tsp
Salt - 1 tsp
Onion powder- 1 tsp
Pepper powder- 1 tsp
mayonnaise - 1 tsp[optional -for extra richness and a good flavour]
Corn starch - 1/2 tsp

Ingredients:

1.Chop up all the broccoli
2.Take a pan add all the milk and when it becomes hot add salt,pepper and stir for 3 mins .
3.Then add onion and garlic powder,Simmer and cook for 2 mins.
4.Add all the broccoli ,mayonnaise and bring to a boil.
5.Serve hot with some country bread as sides

Bittergaurd Curry



Here is a healthy recipe to satisfy your taste buds.Its a recipe with the comination of all the tastes together.

Ingredients:

Bittergaurd -2 small
Garlic - 7-8 pearls
Tamarind - 3 tsp
Dried mango pulp- 3 inch piece[optional]
Chilly powder -2 tsp
turmericpowder-1/2 tsp
Jaggery -2 tsp [powdered]
pepper - 1 tsp
oil - 1tsp
Mustard - 1 tsp
DryChillies - 2
Curry leaves -4-5

Method:

1.clean and chop the bittergaurd into tiny chunks.
2.Then add 2 cups of water and season with salt ,turmeric,chillypowder,mango pulp dried and tamarind and cook with the lid closed.
3.Now add jagerry,Salt pepper and bring to abil.
4.take oil in a pan ,add mustard and chilly to it just when it splutters add curry leaves and give a toss then pour it to the bittergaurd mixture.
5.Now take little oil in the pan add garlic and fry till golden brown then add it to the mixture.Heat the mixture in high for about 5 mins and bring a proper boil.
6.Serve hot with rice and serve pappads as sides.
