Rich Vegetable soup
I feel soups are really the best part of a meal or a dinner for this cool winter .It not only makes some space for your up comming dishes but is also healthy .Here is a rich and healthy soup which not only looks great but tastes yummy.Believe me friends its a real treat.
Ingredients:

Tomato -1
Onion -1
Carrot -2
Zukini -1
Beans -1/2 cup
Capsicum -1[I have uses 1/2 of 2 different colour
Celery - 2 leaves
Broccoli -1/2 cup
Olive Oil - 2 tsp
Ginger - 1/2 tsp[fresh grates]
Garlic powder- 1 tsp
Basil -1/2 tsp
Italian seasoning-1/2 tsp
Pepper powder-1 tsp
Red chilly flakes-1/2 tsp
Salt -1 tsp[as per taste]
Vegetable broth- 3cups
water - 1 cup

1.Take a pan add oil and the onion and saute them
2.when the onions turns transparent add carrot,celery,zukini ,beans,capsicum, broccoli,then season with salt and pepper and keep tossing them when they turn a bit brown at the edges
3.take a big soup vessel add 1/2 tsp of olive oil to it add vegetable broth,water and basil and italian powder,ginger,garlic powderand allow it to boil.Then add all the vegetables .
4.Close and simmer and cook for 10 mins.then open and season with half spoon of olive oil for the flavour.
5.Serve hot with buttered toast at the side.
Hint:
-Chop all the vegetable in samew size .this helps in same cooking time
-add all the vegetables in same order because its always better to add harder veggeis first so all get evenly cooked
-Just when you cook vegetables 2-3 together add extra water to it and then seperate and filter it and then store in bottles in fridge.even the channa or bean boiled liquid can repalce this vegetable broth.
-If you dont have broth in hand simple water will to add 1 tsp of ghee for the richness and extra flavour.
